What are you canning now?

Aww... I guess it came with being a digital graphics major in college. That obviously didn't go farther then a monthly college loan payment!

Must get back to canning today. I have more tomatoes coming in, and peppers.... Thank goodness the rain has cooled us down so much I can be in the kitchen again before 9pm!!!
 
A friend gave me some beautiful tomatoes and I need to get them turned into salsa right away. Going away this weekend so need to fit in my canning in the evenings the remainder of the week.

So much to do so little time. NOTE TO SELF: Buy Lotto ticket - but yet WIN!

Oh my gosh; so much to do with cantaloupe!! I had no idea!!! thank you for all your suggestions, I still have a few more sites to look at and then to get busy!! I managed to gift 6 melons this morning to our kids; but he brought in 3 more...but I gained a little bit!! Probably going to freeze several and then look into the various jams and see what I have to make some. Even a cantaloupe bread recipe on the one site...I really want to try that.

Again, thanks for all the help and suggestions....I think I better get to work!

All this talk about canteloupes makes me hungry for some. Hopefully, we'll find some good ones tomorrow.

I made up a gallon of the Claussen pickle recipe. It smells good and looks great in the jar.
Hot peppers are all washed and dried and waiting to be sliced for the freezer. I'll do that tonight after evening chores.
 
I'm growing pepperoncini's for the first time this year. Anyone have a good recipe for canning them?

I haven't started canning yet, we are having weird weather this year and all the fruits and veggies are behind normal harvest. The peaches haven't even ripened yet. I have tons of blackberries, so I'll be making blackberry jam soon, and I always make pickles. (but again, they're not ready yet) The tomatoes are starting to ripen, so I'll be canning those too.

Somebody mentioned blackberries in wine? I'd love that recipe.

I grow robustini and pepperoncini's and this is what I do. Soak the peppers 24 hrs. in a solution of 1 C lime and 1 C salt per gallon of water, in the fridge. Rinse well, cut 2 slits in each pepper and crush lightly with hand to open slits slightly; pack in jars.

Brine*:
3 C white vinegar
1 C water
3 TBSP sugar
1 TBSP pickling salt
1 garlic clove per jar

Mix brine together (except garlic) and bring to boil, boil 5 minutes; place one garlic clove in each jar. Fill with boiling brine, when adding hot brine, mash peppers some with wooden spoon so brine will enter peppers. remove air bubbles. Cap and process 10 minutes in boiling water bath, start counting as soon as jars are placed in boiling water.

*for each 4 qts. of peppers, triple brine.

These are delicious and on my must make list every year....enjoy!!

I just made zucchini patties for breakfast using the recipe Sandee provided in the BYC cookbook ( thank you Sandee!) I started thinking about all the canning recipes here and wondered if anyone had thought about compiling them into a cookbook as well? One that was just for canning. I promise to buy at least 3 if it happens
