What are you canning now?

I'm in zone 4. Happy Valley area of Tug Hill. Rhubarb thrives here...so do lake effect snow storms:) Rhubarb will keep going until a frost gets it.

I think I am going to transplant a few bunches in a shadier area. Right now I have about 8 plants in a field.

Finally getting a chance to sit for more than a second...... We had apples, apples and more apples today, thinking it was 20 to 25 pounds worth. I'll let you know what I did with them all once I doctor up a dog leg and let the jars cool long enough for a pic. Thinking I may have time for the rest of the tomatoes in the fridge if I don't have to restitch the dog leg.......

So today.....

9 pints, 1 half pint Caramel Apple Jam

Wow... so pretty!

Mine are still hot and I'm too tired to take photos before bed, but I knocked out eight 1/2 pints of caramel apple jam and eight 1/2 pints of hot pepper jelly....

I also got two 1/2 pints of pectin!

Tomorrow.... more caramel apple jam, blackberry jam (thank goodness for all I stashed in the freezer!) and cantaloupe ginger jam... I am sold out of all of it!!!

I made 6 pints of strawberry/fig jelly this morning. It taste wonderful! The fruit was all saved up throught the spring and summer until I had enough for a batch!

I had some left over juice that I think later on I will mix with the left over blueberry juice I have in the freezer. That should make a very pretty jelly!

I'm about ready to peruse this thread, but before i do wanted to ask for tips on using a pressure canner? I just got one! The only canning Ive ever done is some jellies with the wax on top, but I really want to get into canning soups I think

Apple chutney and the remainder of the pears I had. I'm done early today....hmmm. I have a few (81) jars of goodness on my counter and my canning cupboard is full:) Time to take over the toy closet downstairs.

Final count 95 jars made today. Tomorrow should be a big day. I should hit 1000 jars sold for 2010 if the cold weather doesn't scare everyone off.

Wow, I checked out your website but didn't see any prices. How much do you charge for you jellies?

Don't feel bad, I'm up to 360 jars and have plans to take over the bathroom 'pantry', which is just a half version of the kitchen pantry. I also have overflow on one of the book shelves right now.....

Plans are, if we end up not having to move, to build a proper canning jar pantry in the laundry room this winter so that I can store all the jars and the canners/equipment out of the way.
