What are you canning now?

Such a shame to hide it all away in a dark cool place. Nothing on my main level is cool enough with the woodstove all winter. So my canning cupboard is on the landing to the finished basement. That's full, so I'll carry stuff further down to a closet under the stairs that's cool and dark. Just need to get some shelving in there quick.
 
I made this soup today and it is wonderful! I loved it!

I made mine with 8 qts. tomatoes though instead of the 4 the recipe states. I also rendered down the maters and ran them through the sieve first, then low boiled with the cloves, and that worked perfect for me! Thanks for sharing that recipe. It is definitely going in my 'keeper' book

It would be great to can juice in. I always have more fruit than the desire to eat it right now.
I wish I could get those lovely long liter and half liters that are not available in the states.
Jelly is so lovely in a long jar.

Final count 95 jars made today. Tomorrow should be a big day. I should hit 1000 jars sold for 2010 if the cold weather doesn't scare everyone off.

Wow, I checked out your website but didn't see any prices. How much do you charge for you jellies?

I sell them for $5 at the local farmers market. I brought 110 total to the market saturday....95 which I canned friday. I sold 97 jars which is an all time record. I think people were gearing up for back to school and Labor Day.

BTW I sold my thousandth jar yeaterday!!!

I too love the half gallon jars...when I can get them! I have maybe 4--storing beans, popcorn and bird seed for my finches and button quail. I sure would like to get more though. Is there a place that you guys actually purchase them new? Please tell!

Tonight I just finished that Cantaloupe/ginger preserves that have been the rage on here. I finally got the melons processed before the kids got to them! With that recipe I got 8 half pints and a spill jar for tasting in the morning!

I myself do not care for this melon but the ginger and lemon swayed me...I might just have it on my toast in the morning!

I had to change a couple of things, some of which I just don't keep on hand:
I didn't have plum tomatoes, so I used what I had, I peeled and cored them, chopped them up and let them drain in a colander for about half an hour.
I used white grape juice for the white wine
Apple cider vinegar for the white wine vinegar
and that half cup of water they call for? The drippings from the tomatoes got reduced down to a half cup instead, figured I'd at least add more tomato flavor that way.
I had fresh basil so I used it.
I added a tsp of salt as well

Hope that helps, it smelled really awesome.
