What are you canning now?

I don't know... I'm staring at 14 jars and trying to figure out if they are 1: worth enough money to sell as syrup 2: going to take up too much space if they fail at their use and 3:what would make me more money in those jars (answer, dump them, let it go, and make more caramel apple jam and pear ginger honey preserves)

My issue is... would I even eat this as it is... (NO) and would I be able to sell it profitably (NO)

So... I move on! Going to pick up a bushel of Gala apples today (they are out of winesap for another week for so)

Well, after seeing all the problems that you are having with your pear jelly - I think I'll pass on making some. I think I just dry the pears that I have left and call it a day.

Actually I had some sugar free blueberry fail last week and I sold it as topping (ice cream, cheese cake, pancake, make a vinegarette, etc) and they sold as is.

Sorry to hear of your troubles with pear jelly, Vfem....and you too, bockbock2008, with the candy apple jelly.

I make this one every year with no problem. Omit the nutmeg if you want a "plain jam". Same recipe works equally well with apples.

Pear Preserves

1 cup water
6 cups pears -- peeled and sliced
1 tablespoon lemon juice
1 package powdered pectin
1/2 cup thinly sliced lemon, rind removed
4 cups sugar
2 teaspoons nutmeg

Combine pears, water and lemon juice in large saucepan. Simmer, covered, 10 minutes. Stir in pectin and bring to a boil, stirring frequently. Add lemon slices and sugar. Return to a rolling boil. Boil hard 1 minute, stirring frequently.

Remove from heat; add nutmeg. Pour in hot jars, leaving 1/4 inch head space. Adjust caps. Process 10 minutes in boiling water bath.
 
Thanks Kim... but I never had an issue with jam! All my pear, ginger and honey jams set. It is the jelly from me mashing up and cooking down the juice that's the issue. Its beautifully colored clear jelly... but it own't set `

Well, I am going to vent for a second again today... I went to Walmart who are low on jars, I had 2 coupons for $1 off ANY ball product. So I bought 3 things of pectin, and 3 things of jars. I got to ring up and they argue I can only use 1 coupon? Really... I buy 3-4 newspapers each week there are ball coupons, and then I got there and buy 3-4 things of jars and use my coupons all at once until now? SO they make me return one thing of jars, then get back in line and check out again to get my $1 off. I am told this is a HOME office issue and I can take it up with them. Well, you know what... I AM going to take it up with the home office of walmart! That is RIDICULOUS! Especially when the coupons were different. One was only good for jars, and the second one was good on ANY Ball product for $1 off.

I think a whole lot of somebody's can't do their jobs!

But with all those bad feelings behind me... I want to say I am happy to say I got my bushel of apples today

completely out of winesap, but they talked me into getting Cortland apples, they say they were similar (but more expensive)! Has anyone had the cortland apples? How do they taste? How do they cook for you?
 
I finished all my fruit - pears, grapes, red grapes, fruit cocktail and some others. 19 Quarts total. I also did 11 pints of brandied peaches and 5 quarts of pickled peppers. I think I'm done for the year!! It was 42* this morning, so fall is setting in. I do have some tomatoes still out there, maybe I'll make those into soup, and THEN I'm done!

I can see if you were trying to use 2 coupons on the same item, like double dipping on one box of jars but you weren't. I would have left it ALL set and walked out. Now you know walmart price matches right? So you find an ad with even lower prices, if possible and take them to walmart and get your small victory. And again if it were me, I'd use my coupon too
