What are you canning now?

There was an article on the front page of our sunday paper last fall when the state fair was going. The entire article was the come back of canning and how they had 5 times more canned goods entered into their canning contests then they'd seen in more then 20 years! They called it a come back, some people mentioned it was a fad because of the economy and it would soon pass again.

I think people are learning they can no longer take things for granted, and a person is in charge of their own destiny in life... which includes their health, their talents and their responsibilities! I hope more and more people continue to can, and more people start gardening... and I really hope, more people watch what they eat and say NO to the junk that is out there.

I have only been canning three years but we made the conscious decision five years ago to move away from the rat race, sell off our two homes, get some land and become more self reliant and it was the best thing we ever did. It is very important for us to know not only where our food came from, but how it was raised, cared for and processed. It is also wonderful that my husband is eager to learn how to do canning so we can get more done - as I said before I work full time and it puts a bent in getting a lot done during the week - but he is at home 9 months out of the year so he has the time.

The work is so worth it when you open a jar of food and it is so fresh tasting and the eggs in the morning are a beautiful bright yellow yolk smiling up at you! It's a wonderful life.

I taught myself 3 years ago but this summer I did alot more then I ever did. I love canning stuff I grow. It is a great feeling to know you are giving your family something that you made and know exactly what is in it.
 
I'm 43 and have canned for 20 yrs now. I started with jams and pickles for my young children. That's still mostly what I do still and they would not be happy if I didn't send them home with canned goods:) My youngest is in college and shares her jams with her roomies who make a big deal of getting "real jam".

My sisters have never canned, but are asking this year for me to teach them! So we're planning a day of canning at my sisters home. Her daughters and daughters in law will also join in as will my mother who canned 40 some yrs ago, but wants a refresher. Sounds like a fun time. I'm glad they have interest in it finally.


eta...my 22 yr old RN daughter spent last saturday canning salsa with me:) that was awesome!

No, but my mother and husband love green tomato pickles. It's basically just my recipe for dill pickles but I use tomatoes. My mother chops her pickles tomatoes fine for salads and sandwiches.

50/50 % water and white vinegar. 1/4 cup salt per 6 cups of water/vinegar mix. 1 tsp dill seed per pint, 1 peeled clove of garlic per pint. Process for 15 minutes in a water bath canner.

Thank you so much for this. I am going to try these. I have never had a pickled green tomato but I like dill pickles so I am sure these are very good.

I've never made anything with green tomatoes. But, a year or so ago I had an empty set of drawers in the garage. I layered the bottoms of the drawers with newspaper, then put the green tomatoes in the drawers in single layers and closed the drawers. The tomatoes ripened. I didn't do canning at that time, so the tomatoes were sliced in half and then frozen.

This is very good advice, thank you! I am going to do this with my roma tomatoes because they make such good sauce that I would hate to use them all green. I think I am going to try michickenwranglers green tomato dill pickles with my early girls though. They sound to interesting not to try.
 
I just landed myself 3 FREE red seedless watermelons! Time for watermelon jelly/jam!!! But can't get to it until tomorrow

Do the recipe the same way but cut up the peppers before putting in the jar for the 3 day marination, this way the air gets out

She mentioned just holding them over the jar and cutting them in chunks with scissors as the fastest way with least amount of burn.
