Not sure I want to see any more watermelons after today. 3 watermelons, well actually 2.75 since hubby had a quarter of one last night, made 4 gallons of juice/puree and then some!
To see what I did:

23 pints, 15 half pints and I still have about a gallon and a quart of puree left for when I can get more sugar and pectin!

LOL @ "inferno pepper jelly" Love the name. That reminds me of a hot salsa I saw at a farmers market last year. It was called "Bottled H*ll"

Did you try any of this yet? It sounds wonderful to have on hand for sure!! Did it set up for you or are you still waiting?

Haven't tried it yet!
Right now at 18 hours in it's at a decent semi-set, nice and jelled when you tip the jar but it still pulls away from the glass readily. I'm sure it would set further in the fridge when in use.

I just might have to try it...I actually got some watermelons in the garden this year! I am going to steal some of the rinds from the chickens though...I havent had "Slippery Jim's" for many years. That's what grandma called watermelon rind pickles!

Finally done with this project!! Here's what I did with my extra roos (9 of 'em)......pressure cooked them yesterday (shoulda taken a pic. of all those birds in the pressure cooker) and seperated the breast meat from the rest of the meat and strained and boiled the broth last night...left it in fridge over night to solidity the fat.

I like to keep the breast meat seperate so that I can make chicken salad sandwiches, etc. with that, and the mixed meat I use for casseroles or chicken & noodles, etc. I ended up with 10.5 quarts of broth, 5 pints of breast meat, and 6 pints of mixed meat.

I was so glad to get this project done....I have been procrastinating on this one kinda. Still, I'm glad that it's done

That's AWESOME! I'm procrastinating on picking up seven cull roosters from a woman down the street. I've been trying to find the time and the motivation to butcher and can them, but so far, I always manage to find something more pressing to do with my time...... Seeing all your finished cans, lined up so neatly there, and hearing the satisfaction in your post - well, it's very inspiring! Thanks for sharing!
