What are you canning now?

We have seedless watermelons at our stores for $1. each. I've been dying to make jelly, but no one in my immediate family cares for watermelon....weirdos.

I just finished the kiwi jam that I planned to do last night before the storm knocked out my power.

I have strawberries, raspberries and bananas to work with next. As well as 4 or 5 kiwis.

I'm dying to can some hot mustard....never ventured that far from jam and pickles....any recipes??

No, clearjel is a thickener, the only one tested and safety-approved for canning. Do you have an Amish store nearby? They carry it....or it can be ordered online.

You can use an equal amount of cornstarch, or twice as much flour. However, those are not approved for canning.

Well I haven't canned anything in a few weeks and I feel like there is something missing.

It is time to get back to it though as we dug up our sweet potatoes and apples should be ready soon.

We finally got around to getting a group shot of all our items that won at the fair so I thought I would share.

No, they dont turn brown with the citric acid in the Pectin.

Good to know..Thanks. I ended up doing strawberry kiwi to use up the kiwis I had left. I have raspberries and bananas now...
 
10-1/2 pints of strawberry kiwi jam, 11 pints of hot pepper mustard:) If I can scrounge enough raspberries from the garden I'll totally knock out another batch of jam! I have made no plain old raspberry jam at all:/
