What are you canning now?

Heres a question for everyone. I just canned a batch of pumpkin butter, the recipe made about 5 half pints. I plan on making a pumpkin cheesecake with one pint, but what else can you use it for? This was my first time making it.
 
I didn't can anything today but I did make some Hot HOT pepper sauce for DH..he looked like this at supper

I did pick up some organic tomatoes to can this weekend

They were on sale! I got the stuff and made homemade pico de gallo...DH is in heaven

Half the stuff I get I don't have time to can...they eat it too fast! I made a loaf of bread 2 days in a row and....gone. I'll take that as a compliment

The recipe that vfem uses for the caramel apple jam is here in the thread if you do a search for it. It is incredibly tasty!
 
OK, we just went to our towns carnival (fund raiser for the school where they make a %) and hubby just picked up 3 more lbs. of wax peppers........I'll be making pickled pepper rings on Sunday.....gotta do concessions at the Notre Dame game tomorrow-that's why the peppers won't get done til Sunday.

I just LOVE when my daily routine is planned ahead of time!!

I had some to use up too .I dont have a recipe Iam one of those that just throws it together.
I used a dutch oven size SS pan and cut the pears into chunks skin and all. I added about a cup of water and slowly steamed the pears until soft adding water if needed not to let them cook dry.
Then I ran through my Foleys food mill and this removes the skin and makes like apple sauce.I added 3 Tablespoons of vanilla and 1 Tablespoon of lemon juice 1/4 tsp. cinnamon and 1/4 tsp nutmeg.Then about 4 cups of sugar and a package of pectin to help thicken it. This makes about 9 1/2 pints
 
I am getting ready to process some raspberries, apples and peaches. I need a new recipe for Raspberry Chipoltle. I have used the recipe that is on the web. I am also looking to can some applesauce so I need a recipe for that too. Not sure how to can my peaches...
