What are you canning now?

I think if I have the jars hot and sterilized, and make sure that the filling is piping hot when I fill them it will be fine. I can't imagine any of it will last long around my house anyway!

I can mine every year. I cook it all day 24-36 hours in the crockpot with sugar and pumpkin pie spice. Then I run my hand mixer through it and water bathe it for 30 minutes. Never had a problem with it! I know other people will say don't but I have no problems.

off the topic a little why do u cook in crockpot i presume that u cut up into small piece?.
what i do is i clean out the seeds and the plup than cut into 4th then put it in a big roast pan with the pan half full with water and cover it with tin foil bake in oven over night.avenge 18 lbs
Bake in a preheated 325 degrees F oven for about 1½ hours for a medium-sized sugar pumpkin[4lbs], or until tender
maybe next yr i would can my pumpkin

I have cooked all of my pumpkins in the crock pot as they do not burn like they will in the oven. Especially if I cook them on low. I just wash the pumpkins, scoop out the seeds and strings and cut them into large pieces and put them in the crock pot. Once they are cooked I scoop out the flesh with an ice cream scoop. Makes it really easy!
 
Our oven is electric and to run that all night would run the electric bill even higher! I cut my pumpkin open scoop out the seeds and then peel it with a vegetable peeler and cut it in chunks. Then the work is done except to jar it. I like to get most of the work done first!

HI all, I'am going to can some jellies but I have a question, PLEASE
I'am a new canner I bought some pectin the only pectin I could fined and it is the no sugar needed kind.
Well how do I change the recipe on the jelly? I calls for 3 cups of sugar and one box od sure-jell pectin?
I don't like realy sweet jelly, Help ,Please

There are directions in the box. For jelly it's normally 4.5 cups liquids and one box NSN pectin. Depending on what you are using for the liquid, like say apple juice, I'd still add about 2 cups sugar, helps it set and it's not overly sweet (I don't like sweet either).
 
I missed all the pears at MIL's this year, bummer! Too busy with kids activities and life and stuff

But I did finally get to salsa last weekend and ended up with 26 pints and 24 half pints. We'll use the half pints for teacher, bus driver, mailman, propane delivery guy, etc. gifts, and keep the pints for us. I have one DD that thinks salsa is a food group of it's own

I had my first broken jar experience too -- actually ended up with two broken ones by the time I was done. One was a Ball, and one was a Kerr - they might have been older, or I might have put too many jars in one batch of the water bath. In both cases, it looked like the bottom of the jar blew off (and now I had a pint of salsa mixed with my water bath, LOL!)

I also had a jar not seal, even after processing it twice. I looked more closely and the ring was bent a little - just a small ding, where it might have banged up against another one in the box at the store - I switched rings and it worked like a charm!
 
Its been a lot of firsts this year calico. I broke my first jar this year too in the hot water bath, what a mess!

I do save to say it was a wonderful year for fruit though, I was able to grown alot, trade for a lot and buy quite a bit cheaply for good quality. Next year I hope more of my own trees and canes will be producing!

I have noticed this thread used to do 5-6 pages of posts a day, and now its down to a crawl.... so I must sigh... *sigh*... looks like the season is ending.

I was just thinking the same thing about the season closing in reflection to the number of recent posts here. I just have a few winter jams to do and I am done for the season. I sure hope everyone enjoys their treasures this winter!
