Is that because yours sets up soft? Mine did last year and I used it as toppings for everything! Do you have any secrets for better gelling, WITHOUT the use of pectin? Thanks!

Well, pectin is required... but remember pectin is from fruit and long at the fruit has high or decently high levels of pectin in them, you don't need to add pectin to lots of things! Apples are high, oranges and such too. Pears are about medium, depending on type, so are too low to set on thier own. Grapes are good to go pectinless, but you don't get the best gel. Blackberries are good, blueberries are pretty good.... strawberries and raspberries have way too little and need added pectin.

You can make your own pectin from apple skins and cores... the greener and fresher the apple, the better the pectin. Its nice to keep jarred in the fridge whenever you need it and just add 3/4 cup to a recipe with low pectin fruit.

Anyone have a good canning recipie for the bean salad with yellow, wax, green, kidney bean salad that you see at salad bars? I found one but it didn't have that zing and sweetness. I felt like it was missing honey or something...????

I just finished canning 33 jars of black beans and it came out to be 13c a jar (I dont count the jars as they are reused over n over)...

and it really didnt take all that long!!
 
I picked a huge bag of lilacs today. In all, we are steeping 1 gallon of flower petals. I plan to make a little Lilac jelly tomorrow night and freeze the rest for another time. Are there any lilac flavor combos that anyone has tried? I plan to make the lilac jelly with vanilla sugar. I was thinking of a rosemary lilac combo....any thoughts?
