What are you canning now?

I can't wait to get back to canning!!! Last year was my first year, so I didin't know how much to make. Well we ran out of my applesauce and jams/jellies in about 2-3 months! Only things I have left are apple pie filling and apple butter.
Anyone here can pesto sauce or do you just freeze it?

GJ, I got it out of the Ball Book of Preserving. I gotta get the book out and look up the page. So will try to get that back to you shortly.

Oh great! Don't worry about the page, we have that book around here somewhere! Haven't used it since last fall.
Now you guys have me all excited about canning again, but I'm so busy with other stuff!!! AAARRRGGGHHHH!! I see many late nights ahead of me....

Kate, I went to walmart to get more jars yesterday. Sadly, they are sold down to only 5 boxes of quart containers?!

They have no idea when and if they'll get them back in stock soon. They said canning season hasn't officially started yet so Walmart only carries them 'in season' and anything on the shelves was from last year.

At $6 a case for ball jelly jars, they BETTER have them back in soon. I ended up buying the last box of 8oz jars they had from Better Homes & Gardens... and those were $8.12 and UGLY!

You know I stock up... I'm talking 100's of jars whenever I can get 'em. When I sell faster then I can can, you know how much trouble that is? Plus, I can't got over $8 a case or it cuts into profits.

90% of my canning if for business, and the rest is for me. So when I can 90 jars.... I gotta restock FAST and in season. I'm going to try the Dollar General again, but they only ever have pint & quart sizes only. I think Tractor Supply may have them if I run by today. I'm driving out to BFE to pick blueberries on Thursday, and I will probably get enough to do about 30 jars, so I need jars on the ready. Luckily, TSC usually has 12 oz jars, which are perfect for my berry syrups!!! (Pricey, but a lovely jar, in a great size!)
