Wow! I didn't know you could can chicken!!! HOW? I have done zipper cream peas, yellow squash relish, new potatos, cowboy candy(sweet jalapenos), garlic, yellow peppers, home made spagetti sauce(super yummy) and lemon curd!!! whew!!! just learning tho...
 
I typed it wrong, it's strawberry margarita preserves...if your still interested here is the recipe.

6 cups 1/2'd, hulled strawberries
2cups chopped, cored, peeled, tart apples
1/4 cup lemon jc
4 cups sugar
1/2 cup tequila
1/2 cup orange liqeur
2 tbsp strawberry schnapps (optional)

Combine strawberries, apples and lemon jc.
Bring to a boil over high heat stirring constantly.
Add sugar, stirring until dissolved.
Reduce heat and boil gently until mixture thickens, about 25 minutes.
Remove from heat and test gel.
If gel stage has been reached, stir in alcohol.
Return to med-high heat and bring to boil, stirring constantly.
Boil hard, stirring constantly for 5 minutes.
Remove from heat and skim off foam.
Ladle into hot jars and process 10 minutes.


*I've never made this before, I just found the recipe and I'm dying to try it! I am looking for a good, pretty mild, recipe for hot pepper jelly. I've been told it makes an excellent glaze for chicken/pork....mmmmmm!
 
I just finished up 6 pints (and almost a 1/2 pint leftover in my fridge) of Strawberry Rhubarb jam. It was super easy and it's delicious.

I'm going to have to get some more rhubarb from DH's grandmother so I can make some of those cakes/pies people have been posting.
 
TOMATOES FINALLY!!

If you don't know we are in a pretty big draught here in SW Missouri so produce is SCARCE and expensive at the roadside stands.

I have a friend that is as much of a canning fantatic as I and we have been on the HUNT for tomatoes. She called me last night and said she found some... $3 a 5 gallon bucket!! I bought 8 buckets tonight, she was going to buy 20!! I plan on going back next week and buying more. My sister is having a baby tomorrow so I didn't want to over work myself. Will get started tonight and in the morning on the tomatoes...

BIG burden lifted off my shoulders since we rely so much on tomatoes based meals in the winter. I was really getting worried that I wasn't going to be able to find any affordable. Most roadside stands are wanting $1-$2 a POUND! YIKES!
