What are you canning now?

You can't use the ones that seal but my Ball Blue Book says it's okay if some liquid escapes as long as the lids seal. What a bummer though!!! Guess you'll just have to eat the ones that didn't seal or freeze them, just make sure there's enough head space for that.

Over the years I have learned to double check the rim of each jar to make sure there are no chips. The tiniest one will keep the jar from sealing. Also, if you boil the lids for about a minute and keep them in the hot water till you are ready to put them on the jar they seal better. I guess that rubber softens just enough to form itself around the rim of the jar when you put the ring on.

If you find that your jar is not chipped but the lid didn't seal, boil a new one, put it on and put it in the waterbath again.

Hats off to all of you ambitious folks! I'm canning apples this week and making apple butter next week. I just use my Pampered Chef peeler/corer. I wish that the slices weren't so thin. Maybe hubs can figure out how to take the corer/slicer piece off so I can cut the apples in wedges with a knife. Does anyone else use that tool for their apples?

Woo Hoo I'm finished! Did the last of the grape juice yesterday! Rest of tomatoes went to friend's chickens and less ripe tomatoes and rest of grapes being picked to take to my parents back home in Sask. later this week.

2-3 more times and you'll be a pro. I warned you the first few times and a pain in the a$$ until you get the hang of it. Keep it up, it will pay off

HOORAY!

Got 6 jars of Caramel Apple done, and 6 jars of hot pepper jelly done too!

...AND I just entered 14 jars of canned goods into the NC State fair. Last year I brought home nothing, but there were over 13,000 jarred goods entered in the competition!
