Now on to Apple sauce and Cranberry Apple Wine Jelly. I don't drink but the heat should kill the alchohol so we're good there.

You are a wonderful person and do not deserve this. Let the parent / sibling / extended family stuff go. go, like in 'gone' . Save your mental and physical energy for your husband and child.
The others have to put it 'into' your health and well being to get anything out from this point forward. The mental stuff destroys your ability to fight off even the small stuff. Family equity and all.

Ok so the Apple sauce and Apple cranberry wine jelly is done. Plus I did some Apple Walnut compote and Apple Pear walnut compote. Boy am I tired.

There has got to be an easier way to do jelly. That cheese cloth crap is for the birds.

It's very good, but you really don't taste the apple - the cranberry just takes over. It's more of a chunky preserve. If I make it again, I might mess with the proportions and do more apple, less cranberry.

This is the exact recipe I had come across, thanks for the input. I will do more apples

I, however, am in a GIANT fight with jelly. We won't be seeing each other for long, long time.
 
oohhhh HELP! I made apple pie filling and went by the recipe, left at least 1inch head space and ALL of them over flowed!

So in the fridge it goes to make six pies for the freezer. What did I do wrong?
Cold pack apples into jars made cinimon syrup to poor over apples then hot water bath for 25 min. Like I said kept at least 1 inch of head space! anyone help or what is a good apple pie filling recipe?
 
I did apple pie filling for the first time last week. I'm new at this but most of mine overflowed too, had to repack them. My syrup didn't get as thick as it should have either and I really didn't like the pie either.. probably because I used the food processor to lice the apples and i didnt like them that thin really. I was dissapointed overall though at the pie filling recipe. I did get about 10 quart jars of sliced apples that will be used for other things though I'm sure!! Made an apple cinnamon streusel cake this morning with a jar actually.
 
OKAY my expert canners....all the jars have sealed. Don't know if they will be sealed tomorrow but are they good to put on the shelf? Should I put them in the fridge just in case? I know it will be tomorrow befor e they will be cool enough for the fridge but they seem to be super sealed as of now. HELP

Did you use a knife or wand to make sure the air was out the best possible? And the sauce filled in the spaces? That is my only guess, sorry couldn't help more
