What are you canning now?

I have heard horse manure is wonderful...
unfortuanaly a few too many miles...

canned 8 quarts of tomatoes, with my garden freash herbs
and a batch of ginger syrup...
cherries are on sale...bought 9 pounds not enough.

they have a case special..heading back ....so I am gonna be pitting an insane
amount of cherries...hubbie will be happy...
 
Here's our orange marmalade recipe. It works great.

2 cups thinly sliced oranges, the thinner the better
1 cup thinly sliced lemon
Boil with 1 1/2 quarts water for 5 minutes. Remove from heat and let sit, covered, in a cool place for 18 to 24 hours. Cook again til peel is tender at a rapid boil. Add 1 cup sugar for every cup pulp, stirring til sugar dissolves. Bring to a boil and cook until it reaches jelling point.
The recipe I used said to remove all the white parts of the peel because they are bitter. First I took the skin off with a peeler then removed the white layer. But seems like the good old fashioned orange marmalade used slices not bits and pieces.
 
I thought the pectin was in the white part. Some oranges are very sweet skinned.
Then again, I have had wonderful marmalade and very bitter marmalade.
When I made it long ago, baking soda was part of the recipe, which did not make sense to me because 'bitter' is alkaline, I would think adding an acid (sour) would counteract the bitter flavor.
Cooking is serious chemistry, and I was a 'B' student at best in Chem. We need an 'A' student for this. We need 'super chemical girl'. Is she still on?
 
Clucks - If you can't get some near to you, you might consider getting a Miniature horse or Shetland pony. Same stuff smaller amounts.

3 - if you don't like bitter marmalade you might like this recipe for rhubarb orange jam. I personally have never liked marmalade but this is pretty good on toast.

Washed and cut up the rhubarb and put it in the freezer. Won't be doing any canning today or in the near future. Report says temps to hit 99* tomorrow but there is some discrepancy others say 93*. I don't know why the weather men can't agree.
 
Here's the kicker with marmalade... you gotta fun 'thin' skinned varieties for a sweeter side to them. Most of the seedless types make for bitter marmalade I've noticed. :p

I think there is a list if you do a google search on varieties of oranges for making marmalade thats NOT bitter. :)
 
Carols - I have a rhubarb/orange recipe that I made. I'm sure it's not a tart as regular marmalade, but I like it. It kinda tastes tart at first but then you get the sweetness.

Does anyone know anything about freezing rhubarb? I scored some from a friend and want to try freezing it. I didn't like the way it froze last time. I cut it up and blanched it but figure I left it in the water to long. I saved some of the rhubarb water to use if I need water for a recipe. Anyhow can I blanch the whole stalks and freeze them and cut them up later?

Am I misreading the directions for blanching? Should I just drop it in the boiling water and start counting OR do I drop it in the water, wait til it comes to a boil again and then start counting?

I'm freezing everything to save for a cold and rainy day. Lately it is just to hot.

Rancher--we just cubed it and froze it. No blanching. Don't know why. Unfortunately that is all I remember. SO all these years later, I don't remember the quality of the product. We put up a lot of produce though and my mom is a great cook.

I have two differing reports for my area 99-103 and 93 bigg difference. 93 is hot and the crew can manage with plenty of water. 103? I want to be at home just in case. How can they be do far off???
