What are you canning now?

Tonight will be pickles. Next week hopefully peaches and peach jam. Tomato plants aren't doing much this year so I'm hoping that once I have good compost next year from my ladies that things will be better . . . will have to buy tomatoes to can this year! Hoping to get beans from my good friend this weekend . . .

Between Sunday and Monday evenings, I got 5 pints of medium salsa, 6 pints of hot salsa and 6 quarts of tomato juice.

I picked a 5 gal bucket full on Saturday night and went back out Sunday and realized I had missed a few in the almost dark so I picked about another 2 gallons. I'll be going back again tonight to see what has become ready since then. I'm going to try a ragu copycat recipe for spaghetti sauce.

I also picked 3 gallons of hot peppers: red chili, ceyenne, wax and jalapeno, so drying some and pickling some of those as well.
 
I have a bunch of tomatoes to test my new fruit & veggie strainer for the kitchenaid on tomorrow (I think we have we have about the same about as you Bock and would love your hot and mild salsa recipes)

YES you test first!!l Mine is sitting on my counter still in its boxes , Imordered the extra food holding tray too!!! Good luck with it! My tomatoes wont be ripe for another few weeks Im sure;(
 
lets see...6 quarts of pickled eggs, 6 quarts of dill pickles, 12 half quarts of cucumber relish, 3 quarts of bread and butter pickles and 6 half quarts of jalapeno/cucumber relish...next zucchini relish, then hopefully the tomatoes will ripen up so I can start on my pasta sauces!
