What are you canning now?

Yes, here are 2 types of diabetes.

I was shocked to learn how many of my friends also can. It's not very common in my area. I learned from my husbands grandmother. I have a few friends that want to learn, so I'm going to help them out.

Hi! I am a canning newb. I canned some blueberry jam... new to jam too... AND I had one jar that was not filled to head space, cuz I guess I didn't realise the importance of it. Anyway, it's about an inch and a half down from the top. Now, the can lids all popped, so I at least know they are sealed. Is that jar going to be ok, or should I put it in the fridge now, give it to some one who will use it now, or will it be ok in the pantry for a few months? I just didn't have enough jam mix left when I was filling the jar to get it up to the 1/4 inch headspace..

I reckon it will be okay but I would use it asap and put it in the fridge til then.

My recipes always have a little less than a jar so I cover those with tin foil and use them asap. When I do jams and jellies, I use both 8 zo jars and 4 oz. This way I can use a 4 zo jar and any less than that gets eaten right away. Plus I have some for family to test and see how it came out. If I have a recipe that we don't like I don't make it again.

So anyhow get yourself some 4 zo jars to use up that last little bit.

Good luck with canning,

Does anyone have a recipe for Strawberry Fig jam that does not use jello? I have an abundance of figs coming in & a lot of frozen strawberries. I tried the jam with jello last summer & we really did not like the texture of the finished product.

Seems like I remember reading on here that you can can flour and dry goods. Can you do that with pancake mix? I just bought a 10 lb bag of krusteez and since it's just DH and I, I want to either freeze it or if possible, can it. I am running out of room in the freezer.

Holy berries batman!!!! Thats sick!! Congrats!!!

What can I say...we love blueberries. I got 42 pints put in the freezer.

Forgot to say, I take my measuring cup and scale with me when I go to pick berries. Also my recipes so I know how much I need for each. Then when I get home I clean and bag them marked with how much and what recipe they are for.

EX. 2 cps for Blue/Rasp or 3 cps for Blue/SwtCherry This way I just pull the bags I need for whatever jam I'm making.

I suppose you could measure each berry for the recipe, bag and freeze them together and then just pull one bag.
