What are you canning now?

4 pounds ripe peaches
2 cups orange juice
2 to 3 cups sugar
2 teaspoons cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground cloves

pit the peaches, but leave the skin on. cut into small pieces in a slow cooker with orange juice. cover and cook on low 10 to 12 hours ( do not stir ). puree the peaches in a food processor. measure back into the slow cooker,adding2/3 cup sugar for each cup of peach mixture. add spices. cook on high 1 hour. pour into hot sterilized 1/2-pint canning jars. seal and process in a boiling water bath. or bottle and store in the refigerator or freezer.

Peach BUtter-- I will make this next year for sure!!

My peaches are done , too, only a short window. All thre drops went to the turkeys.
 
Old country cook book that belonged to my mother in law. 

The old recipe goes like this:

Pickled Beets

Beets 4 quarts small

Apple cider vinegar, 3 cups

Water, 2 cups

sugar, 2 1/2 cups

Allspice, 2 teaspoons

Whole cinnamon, 3 inch stick

Whole cloves, 1/2 teaspoon

Salt, 1 teaspoon

I use pickling salt. The spices are tied up in cheese cloth bag tied with string. Add them to the brine and bring to a boil and simmer together for fifteen minutes. Add the beets and simmer another five minutes. Pack the hot beets into the hot sterilized jars. Cover with hot brine to 1/2 inch. I put them in a water bath canner for fifteen minutes to be safe. The recipe was the old kind and did not specify


So do they taste similar to the stuff in cans? (But better I'm sure lol) is it a similar finished product or nothing like them?

Orange and peach is an unusal combo-- the kids like orange, so I can see this as the yum factor for kids.
 
Hey guys I need a small batch recipe for something that includes green tomatoes(I have about 2.5 pounds of them). I also have about two or three fresh cucumbers, a few small zuchinis and onions and I dont have any peppers except for some dried chilis. Any ideas what I could make involving this? ideas greatly welcome.

I just put away 12 jars of garden relish(green tomatoes, peppers, onions, cucumber relish) as well as six jars of sweet and sour pickled red onions(Gave two away for a wedding gift) and nine jars of pickled beets. The Beets were my first time making them and both my mother and my husband said they were the best beets theive ever had. I dont usually like pickled beets and even I enjoyed them!. Ive also frozen a lot of stuff like shredded zuchini, black beans, chick peas, beef stew and fricot(Acadian chicken stew) etc.
