Good! There are some good you tube videos to watch to help you get over the jitters.
I am awaiting my DH to make me one of these so I can do it outside. Start up the hint machine. I think your DH has one in him too.

I'm still working on a set up for processing my chickens.

Now I have to tell you I made a Pear Vanilla jam that called for two packs of the liquid pectin. Boy did that come out yuk. It's much to hard. I wonder if there was a misprint. Two did seem like a bit much to me.

Any thoughts ?

Rancher- I made mine with apple and pear and no pectin, and it is still a nice flavor and consistency. The store bought pectin was just getting too expensive for me when times were so tight.
I Chopped up a nice green apple to cook in with the pear and vanilla. I saved the apple peel and cooked it with some of the liquid Strained it and added it for pectin. I did not really pay too much attention because I was just fooling around and had absolutely no expectations.
Apple, quince, guava, and cranberry have so much natural pectin that I have started mixing those in with other fruit.
I am sure there must be a web site somewhere that offers recipes like that.

You might be able to melt the jelled jelly down and add some more pear juice and re-jar it.
Or make some thumb print cookies with the hard jelly for the center.
 
I showed my DH the outdoor stove and he was appreciative. We decided he would keep his eyes open in case a customer just wants to get rid of a cooktop that is being replaced...I told him it would be a big help at strawberry jam time. Strawberry season is always super hot here, so making jam sometimes doesn't get done and it is his favorite. he will keep looking, I am sure.
 
I absolutely love that canning station. I told DH that our next place is going to have an screened room with a stove in it for canning on hot days. Don't want to add heat and humidity to the house, especially since our next place will have central air.
