Peep_show, love the name! if I could send you a jar of "hennible's hellfire salsa" I would . It's perfect. Also love your user name by the way.

Now I just picked about 100lbs of mostly green tomatoes, any recipes guys? That would be a lot of green salsa I need to branch out.

I've lived in CA all of my life, I'm quite certain I would die. Human popsicle. The lowest we get here is +20.

And holy crud on that salsa! What about advertising it as clearing your sinus'. It would probably work really well when you have a head cold.

I had a friend from Bali here we tree planted together. 25c year round in Bali. He adapted. Lol even got too hot.

Oh yeah the salsa cleans the sinuses. Even makes you sweat! Perfect for keeping me warm this winter. Maybe I could use it to stop the chicken water from freezing...;)
 
My angelic friend came down to help me do up 15 half pints and 1 quart of salsa today, we finally got all 5 milk cartons finished. We did 30+ quarts this week and I lost track of how many jars we did last week. All I know is that my table is covered in pears and sweet reoish and hot salsa, with more salsa to be made tomorrow, hopefully not as hot as the last 2 tries, hoping if we use sweet onions and remove all the jalapeno seeds it will be milder. In the last batch we removed half of the seeds and used red onions(not much mellower than the first batch), in the first one we left all the seeds in and used white onions, it was pretty hot.

I soak them in water over night in the refrigerator. Rinse them a few times. It helps a lot.
 
What I've got for Tomatoes,

Tomato Orange Jam with Basil and Saffron. It does contain sugar so may be sweet. Had sweet onions, chopped shallots, garlic, Roman tomatoes, orange rind, chopped and peeled oranges, lemon juice, basil, oregano, white sugar and brown sugar.

Green Tomato Apple Chutney. Has green or partially green tomatoes, apples, onions, brwn sugar, wht sugar, cider vinegar, garlic, gingerroot, hot pepper flakes or cayenne, cloves, raisins.

Tomato and Hot pepper jam. Has tomatoes, chile peppers, herbs, sugar.

I haven't made any of these.
