What are you canning now?

I wanted to share because I'm so excited. Just bought a steamer juicer this week and have it fired up. I am on my second batch of our home grown grapes and the juice is wonderful!  Jarred 9 quarts of elderberry juice yesterday as well as 10 jars of pear sauce. After the grapes are done, I'm going to throw is raspberries, gooseberries and chokeberries to make a juice blend. Our little one loves our homemade juice!


I got a steam juicer last year & I also love it. Makes wonderful juice, so easily.

Do you know you can also steam chicken to make chicken broth?
 
Well, I had my pressure canner checked last night and did my first batch of spaghetti sauce this morning. I am very thankful for people that are willing to help people at the drop of a hat and willing to go through the process step by step and repeat if necessary. Best part is he offered to help me with making sausage and hamburger mixes and everything else meat related. For a guy that is really rough around the edges he was really sweet last night helping me get on the right track and making sure that it was in proper working order.
 
Canned 13 quarts of applesauce last weekend from apples picked at the local orchard. This is my first time making applesauce and I love the pink color it turned out to be! Not to mention it tastes way better than store bought. I always buy unsweetened and I didn't add any sugar to my own, either, but it is much sweeter than the store bought unsweetened.

That is really great! I know having someone say that it is safe to go helps.
When I first started and I had to do the safety check I was upset because I did not know what unsafe looked like. Then my husband said, 'Unsafe looks broken or squashed or ruined, and this looks like it just came out of the box, don't worry."
 
It was Cider Sunday! I harvested the last of the apple tree and got a wheelbarrowful which was then washed and sorted.



Then set DH to work on the grinder and press...




Ended up with 2.5 gallons of cider, which we want to turn into hard cider but haven't the time at the moment and so I canned it for playing with at our leisure.

(Well, didn't can all of it. Saved some for a well-deserved cider & bourbon or cider & rum later)
 
We have a mountain of pears that we are going to turn into cider tomorrow after the hubby gets home from work and probably next weekend we will do the apples. We still have some trees with fruit. I have almost a full bushel of quinces that I'm going to shred and make some quince jelly. I made some last year and we just opened the last jar this morning. During the week, we did apricot preserves, rose hip jelly and peach preserves. So yummy!
