Haha I have baby lilacs everywhere..2-4 ft tall...it will be a long time before I see blossoms!!!! Alot of my trees are Amys!!!! From the swap at....Meagans
 
I LOVE to can! I was really glad to find this thread, and I will be posting pics as soon as I have some to post! :) We have 30 tomato plants, so I'm hoping to can them whole, as sauce, salsa, and rotel this summer. And then we should have lots of green beans too, so I'll can those because my kids love just eating them cold out of the jar! But my closest project is jelly and jam making. Here in LA, we're about to start picking blackberries, then blueberries closely follow that. If I can get my hands on some fresh strawberries, I'll try my hand at some triple berry jam. But otherwise, I'll be making blackberry and blueberry jelly, as well as some mayhaw. I always make huge batches of jelly and then set them in my pantry. They keep really well, and so I haven't made jelly in like, 2 years! Yay! Can't wait!!!
 
Rancher...Is that this year already??? you have plants that big? Our snow JUST melted off last week!!

No that was last year. I did plant some tomatoes and squash though. Herbs are doing good, Lemon Balm bed is full and mints of course. Garlic is up too. A little behind as the chickens got in and ate the tops off but it's coming back. I also have some lettuce growing from last year. I'll take pics. .
 
This past week, I tried canning green beans for the first time. I picked enough for about 3 pints, did a raw pack & put them in the pressure canner for 20 minutes. When I tried them, they were like mush!! Worse than the canned beans you buy. Luckily, it was only 3 pints. I simply smashed them up completely, added a little garlic, pepper & butter, and ate them as mushed green beans.

I guess I'll continue freezing them.

I have been trying to find mayhaws anywhere in the state! Everyone I've spoke to said the mayhaw crop is a complete failure. Spoke with a grower around Lafayette and he had somuntil the storms of last week wiped him out. If you know where I can get my hands on a lot of mayhaws, please send me a d-mail.
 
What is a Mayhaw? I live in NOLA for a year and never heard of it. Then again I think it tae longer than that to pick up on everything :p
 
Just made a quick batch of Jalapeño jam and Mint Jelly the other day. We had lamb so a made a a jar real quick.. then I made the spicy jam for my Pa who was leaving... love it on bagels with cream cheese
