What are you canning now?

we were blessed to have a neighbor who allowed us to glean from his orchard. so many apples but don't know varieties. came home with 14 5-gallon buckets of apples. so far have made 8 quarts of applesauce, 27 pints of applesauce and 12 quarts of dehydrated apples. yummy! i'll need to try the freezing of apples for later use.

this year is a rough year for our family's households. we told family members we need to guard our family budgets, so no purchased christmas gifts (giving or receiving) except for grandkids. it's nice to know i have pickles, juices, jams, jellies, applesauce, honey to make gift baskets for my kids and their families. the small cardboard boxes (half peck/peck) apple orchards sell make great presentation boxes when filled with canned treasures.

We're in a similar situation this year. DBF is starting a business and our finances are tight tight tight.

Last night I canned 1 quart & 3 pints of sauerkraut. My dad will get one of the pints, and the quarts is going to my girlfriend who gave me the cabbage.

Now I'm down to 2 quart jars again. I want to can some mincemeat then I'm done (again).

I have no where to put all my canning! I'm at the point of putting it into the corners of my big corner cabinet, out of the way of the lazy susan in there. I'm not sure where the newly-canned sauerkraut is going to "live".

I need to go to Canners Anonymous.

I just finished 21 quarts of applesauce, added to the 13 quarts I did on Saturday, and 5 gallons of dehydrated apple slices. I don't think I've got enough applesauce yet, so I've got to find some more apples....

Well, got a few more of those darn tomatoes done ~

And that green tomato salsa verde ~ Also some red salsa, & some spaghetti sauce ~ I puttered around so much worrying about using that darn pressure canner that a whole lot of the tomatoes turned red! Oh Well, we can only eat so much green salsa, but spaghetti sauce always makes a major quicky meal.

This was my first time with the pressure canner ~ as you can see, I lost some liquid out of the top because I got too impatient & nudged the little pressure doo-hickey on top too much ~ that's what the book said, anyway.

But add it all up, and it makes for quite a bit of food!

And for those who were wondering about that Nutri-steamer, here are some shots of it ~in action~.
(Sorry about the messy kitchen, I was grinding wheat at the same time.)

This is putting all of the fresh ingredients up in the top hopper ~

Here you can see the three different tiers ~ The top is the hopper for food, the middle is where the juices collect, & can be drained off, & the bottom is the pan that boil the water in. The middle one has a cone type of center with a hole in it, & the hopper has little holes in the bottom, like a sieve.

Once I had steamed the juices out, I put them aside & bottled them to be used for soups & stews ( a vegetable broth), & then blendered the remaining pulp in the hopper.

The end result was 7 quarts of veggie broth, 16 pints of salsa, & 7 quarts of spaghetti sauce!

Turns out I LOOOVVEEE my pressure canner!!

( yup, Jennspeeps, I think it ISS an addiction....or maybe it's just fall ~ I just got a hankerin' to work on the dollhouse & a few rag quilts, & some vintage doll rehab & ..... yah.. all that again......SIGHHH)

Nope JennsPeeps, 34 quarts of applesauce isn't enough! Have 120 quarts of peaches (we LOVE peaches) and 48 quarts of pears down in the storage room. We do have 7 mouths to feed and 2 of those mouths are teenage boys, so I put up alot of fruit. My daughter who is at college had to buy canned peaches from the store today, and she called me and said, "Do you realize that I've never had store-bought peaches in all my 19 years of life until today! And yours are soooo much better. Thanks, mom!" Ahhhhh, another one of those sweet mommy "paychecks" that we all wish for

we just canned up some White Icicle Radish Relish. It's pretty good too!! We also got the Turnip Greens and Collards that are about ready. I swear i got enought turnips for a brigade. we got to process them this weekend before the roots get too woody!! I add some hamhocks and other ingredients cook them and freeze em. They are good all year long. Carrots will be coming due soon and i got plenty of buttercrunch lettuce and red leaf. Chickens love the scraps from processing!!
