Well, got a few more of those darn tomatoes done ~
And that green tomato salsa verde ~ Also some red salsa, & some spaghetti sauce ~ I puttered around so much worrying about using that darn pressure canner that a whole lot of the tomatoes turned red! Oh Well, we can only eat so much green salsa, but spaghetti sauce always makes a major quicky meal.
This was my first time with the pressure canner ~ as you can see, I lost some liquid out of the top because I got too impatient & nudged the little pressure doo-hickey on top too much ~ that's what the book said, anyway.
But add it all up, and it makes for quite a bit of food!
And for those who were wondering about that Nutri-steamer, here are some shots of it ~in action~.

This is putting all of the fresh ingredients up in the top hopper ~
Here you can see the three different tiers ~ The top is the hopper for food, the middle is where the juices collect, & can be drained off, & the bottom is the pan that boil the water in. The middle one has a cone type of center with a hole in it, & the hopper has little holes in the bottom, like a sieve.
Once I had steamed the juices out, I put them aside & bottled them to be used for soups & stews ( a vegetable broth), & then blendered the remaining pulp in the hopper.
The end result was 7 quarts of veggie broth, 16 pints of salsa, & 7 quarts of spaghetti sauce!
Turns out I LOOOVVEEE my pressure canner!!
( yup, Jennspeeps, I think it ISS an addiction....or maybe it's just fall ~ I just got a hankerin' to work on the dollhouse & a few rag quilts, & some vintage doll rehab & ..... yah.. all that again......SIGHHH)
