What are you canning now?

For smoked meats just smoke them very lightly, canning magnifies the smoked flavor. Green apples I am lost. Will they ripen if they sit? you could can them then. You might search the Internet, there could be recopies for green apples.
 
Best wild blueberry picking year ever!!! Ive gone two nights in a row and hope to go back again tonight!!! 12-13 lbs so far...The rains have brought huge full berries this year!!! Blackberries are a month off and the raspberries seem to be non existent this year???
 
I have a old fashioned Potager garden. A soup garden if you will. It's fenced against the chickens, deer, and rabbits. I can grow just about anything in raised beds but not a lot. Since it's just for my husband and I, I don't waste anything. We eat fresh out of it everyday and I freeze or can the rest. Most of the time in small to very small batches.


This was the garden last month. In the foreground is the raised bed with Caliope carrots, Ox Blood beets, and Leaks. I harvest just what I need or what ever is ready.

Today there were enough baby beets to put up two more pints of pickled beets. I put up four pints two weeks ago. Put the extra brine in the frig and boiled it up today for these.


My big stock pot hold five pints so when I just have a few jars to can, this is easier and faster than getting out the canner kettle.

Pickled beets are one of my favorite treats.


I will hoard them all winter and savor them on the coldest winter-y nights. Pulled from the garden and into the pot all in the same hour. Can't buy store bought that fresh.
 
I just scored 26lbs of Santa Rosa Plums, and 36lbs of peaches (with lots more peache to come)

I will make jam and chutney with the plums.....and some peaches are destined for jam. Any other good peach canning recipes?
I have heard you can freeze them whole....but have never tried it.

Oh oh oh! Peach salsa!!! My Ball books are packed away at the moment. Not sure if it was in the Blue book or the big Complete book, but peach salsa is the bomb!! Might be able to find a recipe on the web.

Or, just can peaches sliced in syrup. Then, in say Feb or March, you can make yummy peach cobbler as follows.....

9x9 pan. Unwrap a cube of butter in the pan and put it in the oven while it preheats to 350.
In a bowl mix 1 cup each flour and sugar, 1 tsp baking soda. Add 1 cup milk and mix. When oven preheated and butter melted, pour batter into the middle of the pan. Don't mix the batter with the butter, let the batter displace the butter up and over the edges. That makes the yummy crust edges. Open your quart of sliced peaches and drop them onto the batter by spoonfuls. Bake at 350 for about 25 min, until golden on top. Let cool if you're patient and eat with vanilla ice cream. Makes a great breakfast the next morning, if you double the recipe and don't eat it all!
