What are you canning now?

Silly me. I had thought she called it Cranberry Walnut Chutney, so that's the only nuts that registered when I read the recipe.

It's very easy to do that!

It's like selective hearing for the eyes

Hi All. I would stick with the candied ginger, but because there is alot of sugar you might try the others. But a considerably less amount. I like this chutney with chicken or pork. But I have been known to hit the fridge with a spoon when I need a treat. It really is incredibly flavorful.
Headed to St. Louis tomorrow a.m. for the weekend. Let me know how you like the chutney.

I just told my dh (as he read your post-jennspeeps over my shoulder)"this girl is obsessed with canning." But then I bragged on all you had done this fall/winter. I told him they were beautifully done and I envied you.

I canned 20 pints and 10 quarts of "Lutika," which is a Hungarian relish that we add to everything from Chicken Paprikish to stuffed cabbage, soup, etc. It consists of my organic tomatoes, onions, hot hungarian peppers, celery and sea salt. It's not a summer without it. I go through all of it each year.

I didn't can any green beans or beets this year, I ran out of jars. I need to go thrifting again.

I dried alot of tomatoes, peppers, onions, sweet potatoes, kolorabi leaves and swiss chard this year.

I canned 12 pints of turkey soup, 4 quarts & 2 pints of turkey stock last night!

Dumb me... now I don't have any empty jars for the mincemeat & orange marmalade I had planned to make.

Time for a shopping trip! I actually put some canning jars on my Christmas list!

Good idea Kitty, might revise mine too!!! The turkey soup idea would sure suit my daughter in college, I can imagine having to hide that to keep it around!

ozark hen & DH - Yes, it is a bit of an obsession and yet it also allows me to give Christmas gifts I wouldn't otherwise be able to afford. I've got a cupboard that is full of local produce w/o preservatives, and it cost me about $300 total. I love looking in my cupboards and knowing that I made all that stuff in there! It's very gratifying. When you do a little at a time, as I've been doing since my 2-week August blitz, it's surprising how much you can accomplish. I probably can one thing a month, which maintains a full cupboard w/o tons & tons of work.

I work on a computer all day & am productive electronically but rarely do anything tangible at work. I like to knit, garden, and have chickens for this reason. But all of you already know about the chicken part. LOL

I still want to make marmelade sometime in the next month because I LOVE LOVE LOVE the stuff!!

I canned 6 quart of stew meat the other day. And yesterday I had to go through and make sure that the older canning was in front of the younger canning.
You'll be surprised how quik the canning can get out of order.

JennsPeeps---I sure wish I was on your friends list this year. I love mincemeat pie. Yummy! And the Marmalade sounds yummy also.

Today I am testing some canning with cubed ham and sliced ham. Hope it works. Hubby came in and asked why not just freeze it, I told him I wanted ham if the power went out.

Has anyone else done this with ham?
