What are you canning now?

The canned spiral ham turned out great. I heated the juice from the ham with some water mixed in, heated the jars, added the ham, ladeled the hot juice over the ham and processed in a pressure canner for 30 minutes.

Note----> The ham has to be fully cooked.

New to this thread....I got my first canner (Presto pressure canner) for our anniversary this past Sept and just ordered 3 cases of lids online....can't bear to spend over $3 for 12 at the farm supply store, and I go through dozens every month. I love it! Yesterday I did catfood and meatloaf and today I am doing my first batch of mincemeat pie filling. Bought yet another two cases of jars today, too, and accepted a case from an older woman who my dh bragged to about my canning craze.

Doesn't it feel great to see those rows of jars lined up on the counter? Then labelling them, then trying to find space for them in the cupboard.....best of all, no more take out on those late work nights!

I just canned 6 more qts of cubed ham. Left it in for an hour this time. Even though an elder I know told me 30 minutes for hot, fully cooked meat is fine.

Just to be on the safe side

OK, just had my first big disappointment....4 of the 7 quarts of mincemeat did not seal! Aaargh! And I made a pie last night from the leftover mincemeat that I had not canned.....and I forgot to put it in the fridge overnight....double aaarrrgh! Well, I will make another pie from one of the unsealed jars in the fridge, and eat the whole thing to be on the safe side.....

We butchered a 476 lb hog this week. We made 100 pounds of sausage ( smoked some and aged some), ribs. pork chops and sugar cured a country ham. I canned 19 pints of pork as well. We really enjoy our canned meat every year!
 
Lucky, lucky you Beagles!!! We love home made sausage loaded with sage!!! My husband was farm raised and he misses that fresh food! Lucky you!!!

MoD - I plan on doing a good bit more canning this year too, hoping for a great vegetable and fruit year in 2009!!! And I consider myself a pretty good canner so just yell if I can help you in anyway

...course I say that and think of Squirrels full pantry of canned goods and Jenn and Zoo using every jar in their houses, lol!!! Sooo, you will sure have alot of help on this forum!!!

I have a lot of friends and family members that want my pickles, salsa, and jellies. I've got to where I've told them no more til you bring back my jars (even though I asked when giving them the goodies) They knew I meant business when I wouldn't give out anymore. Some will buy me a case now.
