What are you canning now?

I went to Walmart to buy jars and found they were $1 more than at our Wegmans store. Walmart is not always the cheapest. Don't be fooled. 

Too, much of their produce is foreign.  

I have learned to be careful and watch prices everywhere. Sometimes Dollar General will have better prices than the "big" stores and when our local stores markdown or run a good sale they can beat everyone. With seven of us I have learned to look for the lowest price and know which store carries what. And, I've learned never to assume that just because it's Walmart does NOT mean it has the lowest price or that that price will stay the same from one time to the next. I'm doing my best to pass my careful shopping for the best price on to my kids so they are equipped to do the same.
On a canning note: I canned 8 pints of dill pickles yesterday to add to the dill pickles I canned last week. I also have canned a few jars of bread and butter pickles and my next batch of cucumbers will be bread and butter as well.
 
Same idea as Walmart- grocery and everything else. Here where I live our three big stores that have it all are Meijer, Walmart, and Kroger. We also have a few more local grocery stores such as Remke's, IGA, and Supervalu. Different parts of the country have different stores.

I am sad to say the farthest I have been from Idaho was a straight shot East to South Dakota and as far south as Boise, Idaho. Part of Canada, on the way to Alaska in the truck with my Dad when I was little. I really need to travel farther than this little area, and quit going to Seattle so often, 4 trips are planned for this year between now and Christmas. I get my good Chinese food 4 times this year!!!!

Well the furthest north I've been has been Missouri or maybe parts of Oklahoma.
 
But I just want to travel one of these years so I can actually go down south and see the desert in spring, or go so an alligator that isn't in a zoo. It is just a bucket list I have started, along with places to take the kids, not Disney Land but learning places, maybe Sea World.

Got my second batch of apricot pineapple jelly made, added more sugar this time, 1 1/3 cups worth instead of the 2/3 c for the first one. Tried this one before I jarred it up, and it definitely has more of a pineapple flavor, I even had a little bit extra so Hubby can try it when he gets home today and see which one he likes better. Neighbor tried hers this morning and said it was really good and not too sweet, but I tried mine and didn't really like it, it tasted bland. But then again I don't like apricot pineapple jelly so I can't really say much, I like the two fruits just not in a jelly.

I made kiwi- pineapple jam once and was surprised that it tasted so good! Everyone liked it and it didn't last long. You just never know what combinations will be yummy and which will be just plain boring.
Today I made bread and butter pickles and froze some shredded zucchini. Now I am going to make zucchini bread with the stuff I didn't freeze. Yum!
 
I will send you some of my zucchini, Grandpa keeps planting the stuff and I can't give it away quick enough. Between our two freezers we have three years worth. Sorry for no numbers but my cat is rubbing all over my hands and arms so I can't see the screen.

A few days ago I canned some bread and butter pickles for the first time. I could not believe how much sugar goes into them! But they are so good. I haven't eaten those since I was a child and when I tried them yesterday I could remember moments from my childhood that I had forgotten about, especially bologna sandwiches with bread and butter pickles and ketchup.
 
Yes! I know that feeling! I still have my little red and black plaid lunch box, and it smells like b&b pickles and Bologna sandwiches...and banana.
I flash back to grade school every time!

What would you use frozen Zucchini for? 
I use frozen zucchini to make zucchini bread later in the year when the zucchini is gone. We eat ALOT of zucchini bread or muffins. I ran out of the frozen stuff
last year and tried to plant a few more plants this year. Zucchini bread and pumpkin bread are our favorites. I planted a bunch of pumpkin too that I will can in cubes or puree and freeze for later pies, muffins, and breads.
Raech, your Grandpa must feel like me- You can never have enough zucchini. My Grandma used to send us a loaf or two of zucchini bread home with us every time we visited her when I was growing up. Thus started my love of zucchini. I have discovered it is good sliced and grilled with olive oil too.
