What are you canning now?

Today I am making Strawberry (I harvest another 1 1/2lbs from my garden) Blackberry jam. And thanks to Kim, I have something to do with that over ripe pineapple in the fridge my neighbor gave me.
 
Looks fantastic vfem, I am just finishing up jars of garlic jalapeno and caramelized onion jam. Trying to clear up space to make more new fantastic ideas posted on this thread. So much canning, so little time!

Okay everyone,,,,,,,,,now that there seem to be more people addicted to this thread, I'm going to ask a favor again.

Does anyone have a recipe for taco sauce? Not salsa, not chunky. I want a smooth sauce. My family and I prefer that sometimes when having tacos. I do have a food mill to get the tomato seeds out. I know I could probably puree the salsa. We like the Spanish Garden brand. Just recently my daughter has had the taste for the Taco Bell brand as well. I need to get my garden stocked for the right ingredients. I think 52 tomato plants ought to do it.

I think the spices are more the trick to get the taste we want. What spices and how much?

Henry'schickens, sorry I wish I could help. I do a dry mix in my taco meat and I don't make any sauce to go on it.

Sounds like something someone should have though... its a big community with lots of yummy flavors to share.
