What are you canning now?

6 jars of Apple Butter last night and more in the crockpot today simmering away. Makes the house smell soooooo good. Also thinking about attempting strawberry jam.

I canned 6 pints of pickled beets fresh from our small garden, hope they are good. I don't care for them, anyway you fix them. I also cooked a big pot of beet tops, they taste better than the beets themselves.

I put two quarts of rhubarb in the freezer and will be cutting and putting more away today along with making more of that delicious clover jelly. Everybody seems to love that stuff!

Since my garden isn't doing much of anything right now, me and SO went to our local farmer's market this morning. I bought 2 1/2 lbs of green beans for 1.75. Its just enough to can five pints!

While there, Zach found some pickling cucumbers and asked if I would make him some homemade dills. I said yes and off he went to pick out his pickles. The problem is, he came back with about 7 of these little things.

I think there is enough to make TWO pint jars. Has anyone ever made such small quanities? Anybody got the salt/spice/water/vinegar ratio I need for two pints of dill pickles? I'd hate to break his heart and tell him he will have to wait until next weekend to make pickles because I would have to buy more. And they were expensive for cuc's.

I pulled raspberries out of the freezer and made Raspberry Jam and Raspberry/Apple Jam (for those who like raspberry flavor but with less seeds).

And guess what arrived today on FedEx.....my new Steam juicer!!!!! Yippeeeee! I'm throwing cherries in there this evening to steam off juice for jelly making tomorrow. I can't wait to try the endless possibilities this Summer.
