What are you canning now?

This is my last full week of summer break so I am trying to get as much accomplished as possible. When school starts back there is about a two week window where my body and mind have to readjust to school. I'm useless those two weeks. Today's accomplishments:

7 cups of blueberry freezer jam
6 cups of blueberry-strawberry freezer jam
9 pints of spaghetti sauce
7 pints of salsa
8 1/2 pints of carmalized onion jam

I also baked some blueberry muffins to send with my partner to work. A friend of mine sent me a squash casserole recipe so I baked it as well.

Tomorrow will be canning crushed tomatoes and probably freeze the rest of the blueberries.
 
Yesterday/Today...

10 pints, 2 quarts Peaches
28 jars Apple Butter
3 pints Applesauce (extra from making the apple butter)
20 jars Wild Blackberry Jam

Still have about 20 lb peaches to work - think they'll go into Peach Butter. And about 14 lb cucumbers for pickles.
 
21 pints and 5 quarts pickled beets today.

Well, little one got his six month shots this morning, it always tugs at my heart.

When we got home I got started in the kitchen. Made 6 jars of grape jelly, I think I have one or two more batches to go. Made an awesome chocolate cake from the depression era recipes forum and made this huge 1 gallon ball jar of Claussen style refrigerator pickles! Can't wait to see how they taste.

I totally agree... I've made it a few times now, and I've sold out of it twice. Probably because we've eaten at least 2 jars worth. It works great on the grill too!!!
