What are you canning now?

Im doing corn relish this morning. Im excited because Im about to try canning these with lids that are meant to be reused for years. They are called Tattler. Anyone use these? if they work I wont ever have to buy lids again:)
 
Hubby is finishing up those 1951 Lime Cucumber pickles I started....Looks like it will be 10 quarts!!!!

I'm so excited.

Today, I peeled and sliced about 30 pounds of apples...Getting ready to dehydrate and also do some apple cakes???

Maybe apple muffins too, I have a really good muffin mix bran, in the fridge I could add some chopped ones to....mmmm....

I have a young Red Haven peach tree. I picked all the fruit this week and spent yesterday making BAKED jam. Keeps in the freezer.

Peel the fruit, chop coarsely, 4 cups fruit, 3/4 cup sugar, 3Tbs lemon juice
put it and 1 peach pit in a glass 10x15 pan in the oven at 375 for 10 minutes, then reduce to 325, stir every 20 minutes to moisten all parts. takes about 55 minutes
I blend it lightly when I take it out, having THROWN away the peach pit of course
pour into jars
4 cups of fruit made about 3 jelly jars
I put all the jars into the fridge overnight then freeze whatever I can't use within 2 weeks.

A weekend of crazy storms and power outages, but I finally got all the pickles done. Here's the second batch - I got 26 quarts all together plus another 8 quarts bread and butter pickles!

Well gotta say that the only thing I dont like about those Tattler reusable canning lids is..... no ping as the jar cools down and seals. I missed hearing it but all the jars sealed beautifully and Im looking forward to not having to buy lids for a long time.Here is the link in case anyone wants to check them out.

I will be slowly purchasing a few dozen at a time as I use up all the lids I stockpiled during sales. I found them easy to use and since I seem to have a set number of jars that I use during each canning season it will be easy to buy enough over time to have one for every jar with maybe a couple to spare. They are supposed to be good for a lifetime of canning provided you use them properly and maintain them.
 
Looks like everyone has been busy! Wow! Love looking at all the goodies!

As for me, 5 bushels of peaches to the chickens; another 3-4 bushels left under the trees for the varmits...brown rot!!!

Other than that since last time:
12 quarts of tomatoes
6 quarts of sauerkraut
19 pints of corn
7 jars of vegetable juice
stockpot of tomato juice waiting to be made into spaghetti sauce tomorrow!

Everybody seems so busy here! I wish I didn't have to sit in this office.

I would be canning my pickles NOW. Not enough tomatoes to can this year. It's my first year at my place, and I am really busy building the house. I'd love to check out the canning trade.
