What are you canning now?

I have native apples all around my property. Can I use them? Or is it better to get nice clean apples from the orchard? Does anyone have an apple butter recipe and directions for small/medium wild apples?

My apples are smaller than "real apples" but larger than crab apples. Is there a process to use them without peeling them? What about worms and stuff?

I'm surrounded by commercial apple orchards...we usually pick macs any time now. Just hate to overlook what's in my yard. I hate to rake them up and feed them to the deer if they could make a tastey butter without too much fussing.

I'm sitting here with 3 really ripe cantaloupes trying to find a cantaloupe jam on google.... the first on that came up was yours! I had forgotten about it already

What do you think I'm making tomorrow if my morning goes well? Though those orange peels are going to have to be left out. I'm completely over the orange!

I just had a fantastic turn out, 4 1/2 pints of FROG jam, followed by a few jars of plum and almond preserves.

I only had a few plums left, so I got this book at the library with the recipe, and it said plums are high in pectin, so if I got it (juice and pulp and water, equal sugar) up to 220 degrees it would set on its own. AND IT DID! That's a first for me without boxed pectin. So proud.

PS. - I have to suggest this preserving book, lovin' it! "Preserving Nature's Bounty' Frances Bissell

Any Body Do Mushrooms? I want whole mushrooms to deep fry later, I come up with boil the mushrooms 5 mins, hot pack to jars, add the acid, and 1 tsp salt per jar, top off with hot water and then pressure for 45 mins

I prefer jelly so much more than jam (except for strawberry

). I'll take CHUNKS of strawberry ANY day!! But black raspberry is our household favorite! Do you mean blackberry/raspberry or black raspberry?? Regardless, CONGRATS on your first batch! I doubt you'll ever buy store bought again!!
