What are you canning now?

40 minutes for quart jars and 35 minutes for pint jars. Also, you should add 2 TBSP of lemon juice to each jar for quarts and 1 TBSP for pint sized jars. This aids in making sure that the tomatoes are acidic enough. Just add to each jar before you ladle the hot tomato mixture in.

Thank you very much!

Thank you so much! I will be doing this for sure. I have some huge plans for the holiday and it would be nice to have whole packed figs for baking.

Here's just a sample from what I've done this season so far. I loved seeing everyone else's photos, so I got a few jars out of the pantry.

A random aside:

Yesterday my partner and I took a drive across the Smokies into Cherokee, NC. As we were driving between Cherokee and Maggie Valley we saw several shops offering canned jellies, jams and such. A number of shops had signs for "Frog Jam". After the third or fourth sign, my partner said "I'm not sure I even want to know what frog jam is." Had it not been for this thread, I would have had no idea either.

Wanting to get prepard for when they start falling.

Sad weekend for me - since my husband left for 3 months for his job that is out of town.

If I didn't love him so much it wouldn't be that bad - but he is my best friend as well as my husband. So to keep my mind off things I canned 25 1/2 pints of peach jam from the peaches we picked off your tree before he left.

We have figs too and I need to make some Frog Jam

Strange question...
I picked up a bunch of quart jars the other day and two of them are labeled Ball Special Widemouth, more square in shape than normal, really thick glass. Bands will not screw on to these 2, feels like they want to cross thread. I have them set aside for use elsewhere but was wondering if anyone else has run into this???
