What are you canning now?

My next door neighbor dropped off about 10-15lbs of tomatoes from their garden last night. And I thought I was done with canning already. This was actually the first time in nearly 3 years of living here they have ever spoken to us. I plan to return the favor with some apple butter made with the apples from the back yard.
 
My Mom's computer got a really bad virus last week and try as we might I could not fix it for her. What does this have to do with canning right? I am getting there hang in there. I know this man that lives about 20 miles from me that is microsoft certified and he fixed it for her. Yay!! When I asked him how much I owed him he said "Don't worry about it" that was very sweet but of course I did worry about it! Here is where the canning comes in.... I went home and started thinking that I would trade out some of my work for his! I gathered up a basket of jams and jellies and 18 eggs from my girls and took them to him the next morning. He was thrilled! Well, when I was giving it to him there was another lady there that was looking through the basket too and asked how much I sold my jams for??? So, I said "I don't know I've never sold any before" she said "I'll give you $5.00 for one" and that was it --- first sale!!! Now I am bartering for services and selling my jams and jellies!! I am on cloud 9! Thanks for letting me share!


BTW last night I made more apple butter and more blueberry/ peach.

Boil some water and blanch your peaches to get the skin off (drop in boiling water for 1 minute, move to ice water to stop cooking and peel). Chop into small pieces. HEat 4 cups chopped peaches with 1/2 cup water. Cook on low to soften for about 5-8 minutes. Then bring to a full boil, add 1 package of pectin, boil at a full boil that you can not stir down with a spoon for 1 minute. Add 6 cups of sugar and bring back to rolling boil for another minute. (To check set keep a metal spoon or cup in the freeze and drip a few drops of you mixture into it. Let it sit for a minute in the freezer. When you touch it, it should be partially set and wrinkle to the touch). Now ladle the hot syrup into canning jars (8 oz or 16 oz). Put lids on jars and put into a rolling boiling waterbath in a pot where there is at least 1-2 inches of water above the top of the cans. Do this for 10 minutes (15 if you are higher above sea level).
