What are you canning now?

Thank You! Yes, you add 1/4 cup lemon juice to 4 cups of water and soak them in it for a bit before you start . I know, they are so much better canned at home in my opinion. I would love to start growing my own and eventually I will when I get more time to do so. I also canned mushroom broth in quarts. I have never done this but I had alot of rich looking stock left over so I thought I would try and see how it turns out. Thought it would be good for gravy or a broth for soups and such. Has anyone else ever canned the mushroom broth?

You know I never thought of canning mushrooms either. I can get big packages at Costco for $3.49 and think I will do that for winter stews and soups. Thanks for the inspiration.

Glad to have inspired you Sandee:) You will love having your own canned mushrooms in your pantry. I love my ball canning book. It has so many good recipes in it and no matter how many times I look at it seems like I keep finding new recipes that I never seen before...lol..
 
54 Quarts of beans in the past 2 days. I also made some of KDbeads' Candy Apple Jelly....and wow , was it a hit with the family! I already have plans for this super-simple-to-make-and-delicious-to-eat jelly for Christmas gifts this year. The color is so beautiful, too. A perfect Christmasy red.

I also canned 15 Quarts of Italian Style Tomato sauce and 10 Quarts of Red Curry Tomato sauce.

This weekend I will be canning Caramel Apple Jam and Apple Pie filling.

I LOVE fall!

I've peeled and cut 15 lbs of pears (unexpectedly) along with making 1 gallon of pectin, 6 1/2 pints of apple jelly, four 1/2 pints of lavender jelly and eight 1/2 pints of peach butter. I am going to boil the pear peelings for pear jelly, then do half the pears as pear and vanilla butter, and the other half do the pear ginger and honey preserves! I'm hoping to have time to do more rose petal jelly as I have more then a dozen roses blooming after yesterday's rain. Mmmm

You people really work hard!! I ordered some Cajun Pickling Spices off of ebay and pickled some eggs. Boil water & spices, add vinegar and you're done.

I don't have the patience for real canning but my DH does from time to time.

Tipsy dog--I am sure that the reason for this is because of the risk of having someone can them that doesnt know FOR SURE that the mushrooms they have picked are non-poisonous. You know how it would go..."the Ball book told me to do it this way and I poisoned my FIL with my canned mushrooms! The Ball Company now owes me for wrongful death..." I have heard of stranger things...ie: "gee I didnt know coffee was served HOT!"
