I'm so happy that you joined officially and can share your experiences here as well. The thing that I love about this site is that there are so many loving and caring people out there. When I tell other people about what I affectionately call "chicken chat" I always tell them its not just about chickens - we discuss everything here and there is so much support for any situation that presents itself in life.

At some point I will take you up on your offer - and will search out the thread that 3goodeggs mentioned. But right now I'm focusing my energy on trying to assimilate what the Dr is telling me and getting an appointment with the surgeon. He is in high demand (since is considered one of the best at the University of San Francisco Medical Center) and is not returning calls just yet. My Dr is calling for surgery immediately and it seems the wheels are turning very slowly. But I do have faith that it will all come together soon.

I'm so thankful that I have such a loving and supportive husband who knows exactly the right things to say at the right time to ease my mind. My family is there for me too. So I know I will survive this thing!!

Another fellow BYCer sent me a message and she had a great sentence in there that I printed out and already have posted on my computer - "Don't let the fear gain control".

I will keep in touch and will sign off for right now and let you all get back to the business at hand of canning and sharing your experiences with that.

I can not express how much I appreciate all your kinds words and thoughts for me.

I've got some applesauce in the pressure canner right now - Fuji and Gala combo. I also have 2 pints of chard pasta sauce, 4 pints of mushroom-pancetta pasta sauce, and 2 1/2pints of harissa in there. So, I'm canning it all for 70 minutes. Probably overkill given that the chard is already cooked but it *says* to can it for 70 minutes. I'm not particularly worried about it getting "too soft" for use as a pasta sauce, so it should be fine. (As long as it doesn't carry botulism, I'm fine with it!)

I already canned 14 jars of marmalade today as well - using agave instead of sugar, so my diabetic DH can eat it. Tried this before and it worked well.

Anyone else do some canning today? We're supposed to get *snow* tonight (first time since 1976, if it happens) so I was in a canning mood. Plus apples and oranges were on special.
 
Want to post your orange marmalade recipe that uses agave? I would love to try it as well.

Well, I basically use a standard marmalade recipe, only I use agave where sugar is called for. The first time I tried it, I used 3/4 of the sugar, this time about 1/2 as much. I keep forgetting to add *less* water than is called for, since agave is a liquid already, but I did think of "pre-cooking" it less long so it evened out.

I used Alton Brown's marmalade recipe this time, basically. 9 medium navel oranges, 2 small lemons (+ 1 TBSP lemon juice, just to make sure it had enough acid), one bottle (44ounces) of agave, 6 cups of water. I only cooked it with water for 10 minutes before I added the agave, because I remembered that last time, the agave made it take longer than with sugar to get to the right gel stage.

I'll report back when I test one. See how it actually gelled up. They sure are pretty though!

I usually get Agave at Sprouts Farmers Market. You can get it at safeway, but only in the smaller containers. If I had to do that, I'd go for Amazon instead - you can get the 44 ounce bottles for a fairly reasonable price.
