What are you canning now?

I did pickles the other day, ended up with 14 quarts and 1 pint of pickles. Mostly dills, but did one batch of sweet pickles. I have some jalapenos on the counter now, off to see how many I need to put can them. Green beans are starting to come in, so hopefully can put some up soon. Stupid horned worms are attacking my tomatoes like crazy, pulled almost 20 off my plants yesterday alone! It's maddening! Just hoping I can keep them down enough to get some tomatoes!

The number one gardening breakthough in my life was downsizing. Now, there are just the two of us so bear that in mind.

I had a plot about 100 ft on a side for several years, due to increasing work pressure and drought and depredation by the deer I gave it up as a lost cause. I missed growing stuff so I came up with a scheme to make a little 20 ft square plot with corral panels to keep the deer out. It was truly amazing to me how much produce I could get out of such a tiny space. This year I doubled it to 20' by 40' just because I wanted to grow some corn which takes up a lot of space.

How do you people can in this heat? My house would be 212 if I tried to can now. I'm going to have to freeze then can. DH is going to try to build me an oudoor kitchen by next year so I'll be able to by pass the freezer.

I'm not canning much yet - with our wacky winter weather, not much is producing yet. Still waiting on the peaches.

But I have a BBQ with a side burner, so that's what I use.

oh my gosh sweet cherries,,,, they wont grow here ,, I,m so jealous... I do know you can freeze them for later,, or you could always send them to ,, as certain somebody in south Carolina,,,,jahhhahahh..

a special treat that a friend of mine makes for x-mas presenst is cherries in liqure,,, bu the time x-mas rolls in they are all flavorful and ready to put in you hot tea or drinks..

madori cherries are goos as are the brandy and the peach schnapps cherries,, supper easy to do.. just cherries cover with the liqure and then seal in the cannery.. easy peasy...

have fun with it,,

Made a couple more quarts of refrigerator dills. Substituted the mixed pickling spice for mustard seeds for this batch, sure smells good.

We have a window AC in the house and our house is tiny so it cools the entire house. I just hate the light bill with the AC and Stove going all day!

This last month it was over $100

the month before it was $65...

I put up one pint and one small jelly sized jar of jalapeno slices last night. I think green beans might be next for us.
