What are you canning now?

I threw away 2 gallons of cukes & tomatoes that were rotting before I could get to them.

I was so preturbed, that no matter how sick I've been I forced myself to slice and can 4 pints of dill pickle chips. I couldn't live with myself if they went to mush too. I called a friend and she's coming over after 3 to help me blanch and peel my tomatoes so we can start simmering my basil tomato sauce. The place is to refrigerate it for now, and reheat it when I can get back to canning. I wanted to make salsa since my purple Tulsa tomatoes are coming in, and they are the best for that... but this isn't going to work out I'm afraid.

I'll just have to remember this as a lesson learned year. From now on TICK REPELLANT whenever I'm in the garden!

We have one early apple tree (I don't know the variety) that goes quickly from green, crisp and tart to yellow and mealy so I pick them early and use them mostly for pectin and applesauce that I use for my sourdough applesauce bread. The rest of the apple trees are much later.
 
Hi, I am new to this part of the forum. My name is Steve and I raise lots of bantam chickens, ducks, geese, peafowl...and this past weekend I bought a second hand 12 Mirro pressure cooker. I bought from a friend and she then asked me if I wanted to try out that canner.. Uhh, I guess so, I replied..LOL (I wasn't really sure about this). Anyways she gave me 25-28 pounds of some large home grown tomatoes.
So first thing I do is look up the manual on-line and read it. Next I wanted to run some water & vinegar through it before I do my 1st batch. Oh O, it is leaking , repeated this 3 time still leaked around the seal...ok I will try again in the morning. Morning came and I let the seal soak is some very hot water for 10-12 min. Did another trial run and NO leaks..wha - hoo!!
Now..what do I do...LOL ok, I dipped the tomatoes in hot water for 30-45 seconds to slip the shins off, then cut up the tomatoes, when my pot was about half full I turned the heat on it and continued peeling & cutting up tomatoes and putting them in the pot and keep stirring them constantly until they came to a constant boil. Got the rings,lids and jars hot, poured the tomatoes in the quart jars to 1\\2 inch to top, wiped rim of jar clean and placed lid and ring and hand tightened. Put some hot water in the canner and set 5 quart jars in placed the top on ,,,Hi heat..when steam be going for 10 min I placed the 10 weight(jiggler) for 25 min. Then removed from heat...let steam escape and let pot cool...Later opened pot and remove some beautiful canned Tomatoes...My mother said I just had to do the hard ones first(meaning the tomatoes). A few minutes later they sealed..I heard a slight ting several times. I did another batch after the first one, so I did 10 quarts and pint of tomatoes. Now I hope all goes well and they all take(not go bad)

It was learning experience and I really enjoyed doing it..My friend also gave me a box of cowhorn pepper, which made 6 quarts of pepper sauce. Now all I need is something else to can !!!!

The first 5 jars are just tomatoes~NOTHING ADDED~, that is how my friend does hers and she said she has never had any problems doing them that way and I liked the idea of not putting anythink in it. But, on the second batch I did put the 2 tbs of lemon juice per quart( I just wanted to be safe and hopefully not ruin all these tomatoes

We're still trying to diagnose which one, and that its FOR SURE. I'm being treated for Rocky Mountain Spotted Fever currently, but not all the tests have come back to confirm. I've been down 2 weeks now and it will be at least 6-7 more days before I start to get my energy back.
