What are you canning now?

Over the weekend I did
5 pints of med salsa
5 pints of hot salsa
I did cheat on both salsas and bought a packages of Mrs. Wages mix and then canned it. Its been so dry, we didn't get the bounty of produce needed to make it from scratch and I really didn't want to have to go buy almost everything but the tomatos

Last week was 7 half pints of tomato paste and the week before that was 3 pints of pizza sauce. Thursday night we all had our own personal pizzas with the sauce I made and they were pretty good! Next time I am going to make my own dough using gump girl's bread.
 
Just finished 2 batches of chicken stock and one of beef stock. Ok, I'm over canning stock for a while, or at least till the stuff fills the freezer again hehe.

Really simple to make - From the old MFA Cookbook

Pear Honey

8 cups peeled, cored and chopped pears
1 cup unsweetened pineapple juice
8 cups white sugar

Place chopped pears into a large pot, and pour pineapple juice over them to prevent them from browning. Stir in sugar, and bring to a boil over medium-high heat. Stir frequently to prevent scorching. When the pears are at a full boil, reduce heat to medium, and cook until the mixture is the color and texture of honey. The longer you cook it, the thicker it gets. Cooking time is usually 2 to 3 hours. (Can do this in a large crock pot too...)
Ladle into hot sterile jars, filling to within 1/4 inch of the top. Wipe rims with a clean damp cloth, and seal jars with lids and rings. Process in a boiling water canner for 10 minutes, or the amount of time recommended by your local extension for your area.

Yield- 4 pints

That is pear honey. Doesn't it sound good?

I had this issue with apple jelly last year...

Is it thicker, but still runny? Did you add pectin, or no pectin added?

I did no pectin added and it took 6 days for the apple jelly to set. When this happens to jams/jellies I added pectin, I knew I didn't get the temp up just right and have to redo the jam. Don't forget if you redo them to use new lids.

My kitchen look like abomb exploded for the whole canning season. My hubby is so happy that I am finished and the kitchen is back in order.
