What are you canning now?

math ace: this was my 1st time with pears too, lol I've been makin lots of pearsauce (ya know like applesauce) in my crockpot. I did some pear jam... but I wanna make it alittle better, I chunked the pears I think I want the pieces smaller. Think I might do pear jelly tomorrow.

ps I made the pear honey recipe thats posted a few pages back too.

sooooo tired of being on my feet today....

I havent even made a dent in the free potatoes!!! I hvae about 1/2 of them scrubbed and cubed...partially peeled...

so I'm taking an hour for dinner..we are going uptown to the local diner...since i've been on feet all day long...doing jalapenos, pickles and potatoes...

so when I get back..pressure canning some potatoes...I think I'm gonna have to put the rest of the potatoes out onto the deck and just leave'em be til monday..
I cannot do anymore than what i've been doing today...

I traded some of my blueberry jam for someone elses's strawberry / fig jam just to add variety with the jam selection.

Pearsauce is a possiblilitybut I am thinking it might be more work than just canned pears. I would image that it tastes a lot like applesauce.
I only peeled and trimmed about half the the pears for canning. Maybe tomorrow I could give the pearsauce a try.

Do you have a recipe you wouldn't mind sharing ?

Caramel
Apple Jam

6 cups peeled, cored chopped apples, gala works good (I took a stick blender to them in the pot after they cooked a bit)
Juice of 1/2 a lemon
1/2 cup water
1/2 tsp cinnamon
2 cups brown sugar
3 cups white sugar
1 package powdered pectin

Heat the apples, water, lemon and cinnamon on medium heat about 20 minutes or until soft. Add pectin bring to a boil, add sugar and bring back to a boil for 1 minute. Ladle into sterilized jars and water bath for 15 minutes on pints.
