Caramel
Apple Jam

6 cups peeled, cored chopped apples, gala works good (I took a stick blender to them in the pot after they cooked a bit)
Juice of 1/2 a lemon
1/2 cup water
1/2 tsp cinnamon
2 cups brown sugar
3 cups white sugar
1 package powdered pectin

Heat the apples, water, lemon and cinnamon on medium heat about 20 minutes or until soft. Add pectin bring to a boil, add sugar and bring back to a boil for 1 minute. Ladle into sterilized jars and water bath for 15 minutes on pints.

I got a batch of the relish in the fridge to can tommorow, thanks for the recipie, I was swimming in summer squash!

For Strawberry - Raspberry Jam , what proportions of each should I use?? And do I need to add any lemon juice? Thanks!
 
did 6 pints and 1 quart of sliced peaches in a Mango/Apple/Pear 100% Juice blend. They look so good!

I have a couple of questions. Please.

First I had a book that had a recipe for cantalope but it said nothing about processing. Does anyone know about this or have a cantalope recipe that can be processed.

Two I'm making basil pesto and would like to know if anyone knows anything about preserving it? Either freezing or canning.

So... what I've been doing and haven't posted to my blog (I know, shame on me but as soon as the crazies here die down I'll make a few entries).....

8 pints, 1 half pint green tomato pickles
6 pints green tomato relish
6 pints, 1 half pint pickled red onions
8 pints frog balls
2 quarts, 6 pints, 1 half pint pickled vidallia onions (yes I know that's not spelled right! I just can't spell it)
2 half pints candied peppers
6 pints bruschetta in a jar
and so far for hamburger dill slices..... 15 half pints and 2 pints plus 2 half pints of zucchini done the same way. I'm doing these as I get them off the vine, usually a half pint at a time.

I did do up a bunch of tomato sauce for my mom while at her place, thinking 10 quarts worth but I can't remember that far back now.....

Not near as much as I expected to get done this summer..... Waiting for peanut season, apple/pear season, muscadine season, and STILL waiting on my blue berries!
