I have them fresh, but I'm going to roast and skin them to put on sandwiches or in some taco wraps. I didn't get a lot this year, so probably won't have any for drying. I did dry my cayenne peppers though.

Yeah, jalapenos work. Can't realy say how long it takes for them to dry though. We always string them & hang them out in the sun. At night when the evening dew starts we put in the garage and pull them back out in the morning. We have also hung them in the kitchen. I'd say the more dryer warmer the climate the quicker they will dry.

I seeded a five gallon bucket of Serranos last summer and my hands burned for a week. Got latex gloves to wear if I have to do enough to can.

I like to hold the halved peppers in one hand and scrape the seeds out with a teaspoon so I tend to get a lot on me.

Yes, grill them slowly so the bacon cooks before all the cheese melts out.

KenK, I have done that. They say soaking in alcohol helps. Maybe next time I'll just drink it.
 
I've got to upload the pics of the amazing kitchen I got to can in! I made a dozen jars of garlic/herb mushrooms and a dozen hot pepper jelly. It was so much easier in the humongus fabulous kitchen with 8 burners! I've got to get those pics for you. I put the hp jelly up to the window and with the sun coming in they look so cool! like hp confetti jelly! Soooooo happy! Love, love, LOVE to can!

I was really considering blanching 10 lbs of tomatoes... I've reconsidered and I'm going to take a shower and go to bed. If I get board and don't lose electricity from Irene tomorrow, I'll do it then!

You guys are supposed to be motivating me!!! LOL

Need advice for squash. I've got acorn and blue hubbard. Both winter squash I know but no where to store them in a cool dry place. Thinking of freezing since we have a large freezer. pm my if you'd like.
