Prices on jars varies widely, I wonder why such a difference! I too pay around 6.00 a case for pints, although Walmart here runs closer to 8.50 for the same brand. I am watching for Lowes to start clearing them out, last year I got lids and other accessories dirt cheap.

I have a question about spaghetti sauce / tomato sauce...

who peels and who does NOT peel the tomato?

I was talking to an old Italian guy.. (the husband of one of my patients) and we were talking about making sauce I mentioned to him i am seeing the roma tomatos in the market now.. its soon that time... so we got to talking he said he will crudely chop a tomato into 4 or 6 and toss the whole thing skin and all into the food processor for a bit and then dump the whole lot into the pot and simmer it down...

then when i was talking to my friend who has a big sauce party every fall she peels ALL the tomatoes...

do you peel or dont you peel?

I checked with our lowes and they don't carry canning supplies in stock here.

Also, If you are near an Ace hardware. .. . you can stop in there and pick up their ad and have walmart match the price.
I say that because Ace around here does not typically carry lots of canning jars.... my will most likely be out of stock during this sell.

It is Sept 2 - 5. Ace is closed on Sundays... BUT Walmart is not. So, you could get them on Sunday if need be.

Just a reminder: the ACE sale specifies regular mouth jars, not wide mouth. Just something to keep in mind before driving to the store this weekend.

It's really a personal choice, some say they are bitter, I have never noticed that at all. I personally do not like the little peels of skin like twigs in my sauce so I peel.
Leaving them on does keep all the nutrients you just have to make sure the skins are really clean if you choose to do that. Or you could get a food mill that will seed and peel and all you have to do is throw them in easy peasy!

When deciding on peeling vs. not peeling, your real decision needs to be about do you like a smooth sauce or chunky sauce. If you like chunky, peeling is your better option because you won't be liquifiing the peels (like you would be doing when putting the toms in the blender for smooth). When the toms are just chopped with the peels left on, they come off in a noticable piece and remain in the sauce. Make sense?
I like a chunky sauce, hence I spend the time to peel. Honeslty, Romas are so easy to peel it takes no time. If you are using any other variety you will have a more difficult time.
