What are you canning now?

I picked up 8 quarts of local raspberries. So hoping to get some jam done today. Blanced and froze a few gallons of green beans and some corn last night. Tomatoes are waiting for me. I hope I feel good so I can get it all done!

Everyone - I've got a book from the Library that looks like I might buy it. Ok I will but anyhow the title is "PRESERVE IT". It's got some great recipes in small amounts. Like Rosemary Jelly and Hot Pepper Jelly.


What I need to know cuz I want to make some is about ginger. The recipe for Rhubarb , Pear and Ginger jam, calls for 2 small balls of stem ginger, (finely chopped). I know about fresh ginger but what does it mean "small balls?"

gotta run, gotta watch baby while the kids run to Lowes for me. Pebbles on sale.

The ginger rhizome has what I would refer to as 'buds' which could be called 'balls' because when broken from the main stem, they are round- about as big as the tip of my thumb. They are usually more tender because they have less fiber. If they are fresh you may be able to put then through your garlic press.
Ginger is my favorite spice/herb/medicine that God ever gave us.

Thanks. I didnt' get to pick berries and probably won't. I've been planting the plants I got on sale. SIL dug the holes and then I just bought bags of garden soil to back fill with. Easier but not easy for me. 5 gooseberry . 4 currant and 15 raspberries. I still have some to do. My body just gave out. I nearly didn't make it back to the house.




I also have some lilacs. But I gotta ask . What critters do I have to be concerned about eating my plants? I have to wrap my roses or the voles girdle them and I've lost three lilac plants in the past but I'm not sure they were eaten. Do I need to fence these things in? There are deer around and rabbits and mice and voles.

I like a chunky sauce, hence I spend the time to peel. Honeslty, Romas are so easy to peel it takes no time. If you are using any other variety you will have a more difficult time.

How so? If you're blanching any tomato variety properly the skins will slip right off. I grow 10+ varieties of tomatoes every year -- and different ones each year -- none are more difficult than any other.

I find that any varieties with grooves/ribbing/folds tend to hold on tight to the skin in those areas. In MY experience.

The candy apple jelly is my 4 yo's favorite. Let me restate that as ONLY jelly. she won't anything else except her "red hot jelly" on her toast, biscuits and pb & J

I like smooth textures so I eliminate the peel. I got a saucemaster this year and love it! It goes really quick when you cook them for a few minutes to soften them

I say that because Ace around here does not typically carry lots of canning jars.... my will most likely be out of stock during this sell.

It is Sept 2 - 5. Ace is closed on Sundays... BUT Walmart is not. So, you could get them on Sunday if need be.
