What are you canning now?

Yay Chicks! :

I'm really new to this canning business...what is Clearjel?

Edited to ask: What type of mustard did you use?

Clearjel is a corn starch type of thickener. Some recipes I searched call for it and some call for flour. I think the clearjel makes it more like translucent, like pie filling. seems more people prefer using it to the flour, and some people advise against using flour in canning. I made apple pie filling last year and used clearjel and it has been ok. As far as mustard, I just used plain yellow mustard. Aldi brand.

Thanks, Marymac

Just totally cleaned out walmart of their double boxes of pectin for 3.38$ a package...bought 18 packages..

I could never find those and got stuck paying 2.87$ per box! Never again! Stopping at orchard to get apples for more apple butter

Canned some pickles. I used the Mrs. Wages kosher dill seasoning packets. So yummy! I couldn't believe how crunchy the pickles are, too! Good pickles makes this pregnant lady happy!

they will probably restock also at least one more time, if you need more.

I counted the number of cases of jelly jars I have in my basement 77 new boxes! A couple more cart loads from walmart should get me through winter

ooohhh not to mention the 6 flats of pectin (144 boxes), about 85 boxes of new lids, 10 boxes of rings......and thats just for the business. I have a couple hundred used pints and quarts.

So I just scored 200 ears of corn from the farmers market dirt cheap. Besides corn relish, cob jelly, and just canning it what else could I do??? They even husked it all for me

LOL.....If I knew it wouldn't cost me a fortune and that it would get to you with out being broken I would!! Sadly to say though this year we don't have such an over flow due to some darn blight everyone around here was hit with. Farmers & produce growers we've spoken to say it's due to a lack of calcium in the soil. First thing on our list next year....get the soil checked!! My chickens sure do them though!!!
