I'm really new to this canning business...what is Clearjel?

Clearjel is a corn starch type of thickener. Some recipes I searched call for it and some call for flour. I think the clearjel makes it more like translucent, like pie filling. seems more people prefer using it to the flour, and some people advise against using flour in canning. I made apple pie filling last year and used clearjel and it has been ok. As far as mustard, I just used plain yellow mustard. Aldi brand.
