What are you canning now?

thanks I can't wait to try them. Sitting here (when I should be in bed it is almost 1 am! sheesh) hearing the pings. I have 1 that hasn't sealed yet. I would like to know that it is sealed before I go to bed.

The organic seems the purest, but do you have the rest of the recipe? Christmas is coming and I need to make sure I have plenty, of jams and jellies.

I had to get up early to watch the queen while her mom took dad to work. She was watching jungle book and started to cry when the baby started to cry at the beginning. she's so sweet.

3 1/2 cups of juice
5 cups od sugar
1 box of powdered pectin

Cook juice and pectin to a roiling boil-add sugar and continue to slow boil for 10 minutes-scoop scum off top and can!
 
I'm expirimenting with juice now. Just made 2 pints of spiced(?) apple jelly. It looks and smells pretty good. I used apple juice, pectin, ground cinnamon, ground nutmeg, and sugar. We'll see how it turns out. It still has 10 mins to go in the hot water bath.
 
I'm hoping to have some energy back by this weekend, I really need to make more chipolte mustard! YUM! So miss having it in the fridge.

I went to the doctor today and we have a schedule of tests to run next week. Unfortunately, hubby got laid off today so I don't know how long the insurance will last before its gone and I no longer have coverage to figure out whats ailing me. We do think its an autoimmune disease though, good possibility its Lupus, the lesser of the two options with that. We're testing several other things though as well, just in case. I'm going to start using daily probiotics for now though, he really thinks that will help me alot.

Someone else did kraut on here. Do a byc search and see what they did.
I had trouble getting the brine to sour, so I added some homemade vinegar and got the mother started that way. cheat.
