I canned some tomato's last fall and added the lemon juice on the top than processed them. Now I haven't eaten any of them because the recipe said to put it on the bottom of the jar. Do you think they are still OK to eat or should I just be safe and toss them. I'm new to canning so thought Id ask everyone.
I add the lemon juice on he top, too. They are perfectly fine to eat either way. The lemon juice is precautionary, just in case the tomato variety you are canning is a low acid variety. One never used to add any acid to tomatoes before the low acid tomatoes were developed.
