What are you canning now?

I canned some tomato's last fall and added the lemon juice on the top than processed them. Now I haven't eaten any of them because the recipe said to put it on the bottom of the jar. Do you think they are still OK to eat or should I just be safe and toss them. I'm new to canning so thought Id ask everyone.

I add the lemon juice on he top, too. They are perfectly fine to eat either way. The lemon juice is precautionary, just in case the tomato variety you are canning is a low acid variety. One never used to add any acid to tomatoes before the low acid tomatoes were developed.

Love this time of year! I have made Plum Jelly, blueberry jam, strawberry preserves, strawberry jalapeno jam, squash pickles, chow-chow, pepper jelly. Tonite its blackberry jelly.

I was always under the impression that all home canned goods, with the exception of pickles (good for two years), were to be used within one year. My friend told me that she keeps her green beans and potatoes for a good two years. Who is right? I guess I could see something like sauerkraut or other pickled items, but never beans or potatoes.
 
Do you do baby beets? They're one of my favorite additions to salad.
My grandma usually does the little ones you can whole while i prefer sliced so I usually get the bigger ones. She got 9 pints of little ones though. I still have alot left in the garden that were too small so I will be doing more when they are ready.

Home canned foods are "good" in the sense that they are not spoiled for as long as the seal is not compromised. Find 30 year old tomatoes in Grandma's cellar with an intact seal? They're not going to be spoiled.

Now, home canned foods are "good" in the sense that they have peak flavor and color for a considerably shorter period. Most official recommendations (those for 1 year or less) are based on this use of the word "good", but still tend to err on the side of caution. Stored in a cool, dark place most home canned will maintain their color and flavor for more than 1 year... but still less than 30+.

Many, many people keep their canned goods for more than a year. I can assure you, I don't go dumping them out at 12 months.

Agreed. We have a rule where anything that actually makes it to 5 years without having been devoured has to be taste tested. If it's good, it has to be eaten ASAP. Only thing that lasts in my pantry that long is usually jelly since I make soooo much of it. We are testing a few jars of apple jelly later today actually so there may be apple jelly glazed pork loin later this week ;)
