What are you canning now?

I made this one last summer with roasted chile peppers, easy to make tasted great and ran out too soon. It may take up to 5 days to set so give it time.

Jez's New Mexican Green Chile Jelly

2 cups chile, diced, seeds and skin removed
4 cups sugar
1 cup apple cider vinegar
2 cups water
1 2 oz packet of fruit pectin

1. Start your water bath and sanitize your jars.
2. puree chile in food processor.
3. bring to a boil, reduce heat and simmer the chile with water and vinegar for 15 minutes.
4. add pectin all at once, and return to a rolling boil stirring constantly.
5. add sugar all at once, and return to a rolling boil stirring constantly. Continue stirring for 2 minutes.
6. remove chile from heat
7. process 5 mins, 15 mins for altitudes higher than 3000 feet.

Other than snickering at them, I just did not know what to do with the peter peppers.
Of course you pickle peter peppers. I zoned out there.

You's guys are so lucky to still be harvesting veggies from your gardens! I wish our season lasted that long. As for us, I put up 6 quarts of pea soup yesterday and I'm hoping to get a bunch of pickled beets done in the next day or so.
 
Well, this is the second planting of beets. I start in early may and plant a few rows and then when they come out I plant again for a second harvest. Our growing season is only from may to october, so this will be it for all our veggies till next year. I still have a ton of green tomatoes and some cucumbers, zucchini and butternut squash still growing. They'll go till frost, which should be any time now.
 
All we have now is zucchini, yellow squash and some bedraggled looking tomatoes, LOL. I didn't put in beets this year, but I will next year...the chickens love the tops!

Scored big today, though. Got freebies: apples, carrots, pears (finally), potatoes. Fortunately, the veggies will keep a while so I've got time to get the pears done up...sauce and butter, here we come! 3 grocery bags full. Going to try to get apple pie filling canned tomorrow. Got some free Macs that are awesome for that!
